A hidden gem on a narrow one-way street in Lentini, A Maidda serves up a wonderful dining experience that I'm fortunate to have stumbled upon.
Beyond the front section and its tables are tunnels which Executive Chef Salvatore says was used by Greeks of antiquity to escape enemies when the city was under attack. Today, they keep wine safe from Sicily's summer heat; a no less important task.
I went with a few friends and left the evening's selection to the Salvatore. He presented a four course meal that began with an antipasto of seasonal vegetables: Pepperoni, caponata, zucchini, and artichoke hearts amongst others. A trio of pasta dishes followed as the primi: fusilli flavored with pesto, pistachio, and eggplant with mint. Sausages of wild pork drizzled with balsamic came out next as the secondi.
Traditional Sicilian cannoli were dessert with a digestif homebrewed by the chef from a native plant that struck me as a cross between wild sage and mint. It was sweet, but strong. Imbibe responsibly. And naturally, espresso was served last because drinking coffee at 11pm is what Italians do. When in Rome I guess.
It was a lovely meal and I intend to return soon to try the chef's speciality, linguine with blood orange and tuna.

Magnificent! The tuna and orange spaghetti (the chef’s speciality) is a delight and utterly distinct. So much so that Jeff Bezos drove across Sicily for it. The other dishes were also excellent, such as the almond and onion stuffed sardines, which were remarkably chunky and satisfying. The owner is very welcoming and accommodating. It was a wonderful surprise in a sleepy town, having pulled off the main road on our route south from Catania. Would recommend VERY highly. Do it!!

Lo chef cura e coccola i clienti accompagnandoli verso una cucina dagli antichi sapori che predilige il territorio: verdure selvatiche e stagionali, maialino dei Nebrodi eccezionale
Se devo trovare un elemento negativo: è aperto solo domenica a pranzo, un vero peccato! Merita molto di più

A wonderful Sunday evening, excellent and high quality food, the owner of the restaurant spent his birthday cooking for us and allowing us to spend an unforgettable evening, his specialty, spaghetti with blood orange, has a unique and unforgettable taste. Highly recommended❤️

Having come across it by chance, we were pleasantly impressed by the goodness and authenticity of the dishes, the passion of the owner, the kindness of the staff. The room carved into the rock is an extra gem. Worth trying if you are in Lentini and surrounding areas.
