09/12/2025: A restaurant serving traditional local dishes, welcoming in its rustic setting.
The flavors remind me of my grandmother's home cooking. There's no pursuit of a "starred" dish, much less "presentation." Instead, there's what really matters when dining out:
Adequate portions, flavorful dishes, and affordable prices. Plus, friendliness.
When I get up from the table to leave the restaurant, I know I'm full.
Special attention is paid to the meat dishes, which I consider to be of excellent quality.
04/12/2025: My wife, son, and I go here often, and each time our experience is a pleasant confirmation, both for the excellent food, the clean, warm, and family-friendly atmosphere, and the courtesy and friendliness of the manager and staff.
Absolutely nothing negative to say; five stars are fully deserved.

20/10/2025: I rarely leave negative reviews, but I had a really bad experience.
The price was really excessive for the quality served.
I won't go into details because I might seem heavy-handed.
20/10/2025: First time at Colle, but definitely an experience worth repeating. The service was prompt and courteous, and the cuisine was top-notch. Probably the best polenta with wild boar I've ever eaten.

30/08/2024: Cena veloce di passaggio lungo la strada Ormea - Imperia.
Devo dire di essere rimasto piacevolmente impressionato. Ristorante con Hotel storico, pavimento in palchetto e sedie in legno.
Tavoli ben distanziati. Servizio veloce e cortese. Bellissimo respirare l'aria di una volta.
Tris di antipasti. Ottima tartare di fassona con tartufo, fonduta e tuorlo d’uovo impanato.
Sformatino di basilico e flan di porri con polentina saracena, e per finire baccalà mantecato.
Ravioli al sugo. Tutto buono e anche visivamente piacevole. Ma quello che mi ha impressionato è il costo.
A Torino, sarebbero stati 3 piatti di antipasto da 15 euro l'uno (ormai i prezzi sono fuori controllo...)
Qui il tris è costato 16 euro. Ed eravamo già quasi sazi così.
Unico neo. Se si finiscono i funghi, conviene dirlo subito, invece di aspettare la nostra ordinazione e poi dire che erano finiti...
Sicuramente torneremo.

23/08/2024: Sullo Scollinamento dell’Appennino ligure, Sulla statale da Imperia verso Garessio, c’è questo storico ristorante che rappresenta una tappa fissa e memorabile. Gusti della tradizione della buona cucina rivisitati in ottica moderna. Dagli antipasti, ai primi, ai secondi fino i dolci ed il servizio tutto ottimo. Sublime tartaree di fassona con tartufo, fonduta e tuorlo d’uovo impanato, sformatino di basilico e flan di porri e per finire gli antipasti misti: brandacujun. Tutto eccellente. Primi dai plin ai tagliolini ai funghi porcini c’è da sbizzarrirsi, uno più buono dell’altro. Per i secondi: le carni sono tenerissime, anche la trota al burro è buonissima e che dire del cinghiale… provare per credere.Ambiente tranquillo, sempre pulito ed ordinato ed il personale attento, gentile e sorridente. Il servizio è rapido.

14/04/2025: Pub con menu vario, scelta di birre e cucina ligure veramente buona. Praticamente tutto fatto in casa, pasta servita in pentolino saporita e abbondante.
14/04/2025: Un endroit à ne pas rater si vous voulez passer un moment gourmet. Le restaurant est cosy. Le personnel est serviable, dynamique et à l'écoute. Les plats sont délicieux et succulents. Je recommande à 200%.
