Finally a Piedmontese trattoria that has not barricaded itself behind the untouchability of tradition. Let's be clear, it is not an experimental restaurant: the dishes are traditional but they are all updated and made tastier, more interesting and curious. A sigh of relief! And listen, there is a real attention to vegetarian dishes with ingredients that come from the earth... no seitan! Very extensive wine list, starting from the bottom.
