03/05/2026: There are restaurants where you eat well. And then there are places like La Fortezza in Chivasso, where every dish becomes an experience, a memory, and, above all, an immediate desire to return.
The experience we had the pleasure of tasting was simply extraordinary, a perfect balance between sea and land, executed with rare precision and sensitivity. From the delicate and perfectly balanced rossetti in saor (red sardines), to the zucchini stuffed with shrimp, where the sweetness of the vegetable blends with the freshness of the sea in an elegant and never banal way.
The sole in orange-and-sage butter is a dish that deserves special mention: impeccable technique, clear yet harmonious aromas, a construction that demonstrates a sure hand and a clear vision. The grilled sockeye salmon with samphire confirms the quality of the raw ingredients and the ability to enhance them without excess, letting the product speak for itself.
The first courses raise the bar even further: the linguine with shrimp, fava beans, and pecorino cheese is a masterful example of the balance between sea and land, while the penne with cuttlefish, Riviera olives, and pistachio pesto surprises with their originality and flavorful coherence. Here, you can clearly sense the kitchen's ability to break the mold without ever losing control.
And then the desserts: the Dolce Chivasso and the bunet with acacia flowers finish with elegance and identity, leaving a rare sense of completeness.
But what truly makes La Fortezza exceptional isn't just the quality of the dishes. It's the care in preparation, the almost sartorial precision of every detail, and above all, the team: a smiling, genuinely friendly service, never intrusive but always present, capable of accompanying the experience with ease and intelligence.
