Historic place with a purely Lombard menu. I particularly appreciated the snails (already shelled) and the yellow risotto.

A truly special evening in one of the meccas for lovers of Milanese cuisine, a place that has made the history of Milanese cuisine... in short, very high expectations and, in the end, fully satisfied. The restaurant is located in a peripheral area of ​​Milan, but full of history, a place that seems to have come out of a song by Jannacci or Gaber, a place that smells of work, fatigue, fog, cold... but inside so much warmth and so much tradition. Our dinner begins with a sharing of a dish that sent us into a tailspin: nervetti! Eaten dozens of times, but here they offer them in a variation never tried: hot with onion, parsley and vinegar. A sublime dish. We then continue with the dish that deserves the highest step of the podium of the evening and not only that, in fact their risotto with saffron stims, superior butter and Lodigiano Riserva is almost perfect and, from memory, I don't remember having eaten better ones... and that's a very strong statement given that we are Milanese doc! We continue with an off-menu item for my wife, that is, a long-cooked veal tip that, having tasted it, I have no hesitation in defining it as truly excellent; I go for a "classic" dish: the Milanese cutlet that they offer in a tall version, with bone and pink. The quality of the meat is 10 and praise, cooking is not exactly pink, it was a little over, but let's say that the taste is not affected: moist and exceptional frying. Not full, I allow myself to finish with a plate of snails, divine! The evening was bathed in an excellent Lugana di Ca' Lojera Riserva del Lupo 2020.

You enter a trattoria, one of those from the past, immediately the bar counter in front of the tables with the chairs of the past all beautifully polished, of course the white tablecloth the mise en place does not remind you of a trattoria but of a restaurant. The dishes of the Milanese tradition but not only, excellent, and the service left me thinking of returning. Fair bill.

One of the magical places in Milan, where you can eat excellent food, services from attentive and trained staff, in a splendid setting. Reservation required. Significant but justified prices. Ah endless wine list.

After a few years we returned to the Trattoria del Nuovo Macello. Giovanni Traversone, assisted by his wife Paola and his children, confirms, over time, the character of a place that maintains the Milanese imprint of the cuisine, with the usual attention to the quality of the raw materials used and the seasonality of the products. The restaurant has remained unchanged over the years, with its simple and informal character of an authentic trattoria but, at the same time, with a mise en place of sober elegance (the contrast between the white tablecloths and the "old Milan" wooden chairs is of very pleasant effect) which predisposes well to the gastronomic experience. The kitchen offers, in addition to the menu, a tasting menu (60 Euros) which allows you to get to know the cornerstones of the Nuovo Macello (starter "Assaggiando Milano", risotto with saffron pistils, cutlet) but also a business menu very well focused in terms of content and price. The cutlet alone is worth the experience: 250 g, with or without bone, matured for 40 days which makes it tender and meltable, crunchy and light breading. On the menu, of course, other classics of Milanese cuisine - in the "contemporary" version of the Nuovo Macello - such as mondeghili, tripe, veal kidney, roasted guinea fowl. Selection of high quality cured meats and cheeses. Wine list suited to the cuisine. Welcoming, precise and professional service. Very pleasant overall atmosphere.

Al terzo tentativo ho unito la qualità con un servizio attento, che era mancato le volte precedenti. E stavolta ho apprezzato di più anche i piatti della tradizione lombarda. Da provare di sicuro.

C’è chi ci crede e chi realmente può: il Nuovo Macello si impone da anni come uno dei migliori ristoranti di cucina milanese in città. Chef Giovanni è preparato, consapevole di sé e della qualità di questa magnifica locanda, lontana dagli luccichii della movida milanese. Per lui l’alta borghesia si muove davanti a strutture fatiscenti, in una periferia nebbiosa in cui la notte avvolgente ricorda la Milano degli anni Cinquanta. La famiglia che si è creato attorno è un mix di parentele e sudore, un esempio di buon lavoro che è difficile imitare oggi. Il risotto spacca, la cotoletta annienta. Oggi proprio come un tempo. Qualità ed eleganza, tutte da provare.
