La fame è qualità della cucina si paga perché è difficile trovare posto e se si trova se sente la pressione per fare “presto” ma vale la pena perché la qualità dei prodotti è eccelsa di certo superiore all esecuzione dei piatti . I prezzi più alti della media per porzioni ridotte, il locale è un seminterrato reso angusto dall incastro dei tavoli ma un grosso complimento all arredatore che ha saputo renderlo con un gioco di specchi più ampio , spettacolare l affresco sul soffitto ( vedi foto) . Mentre alto il numero dei camerieri che come aumentano i commensali perdono funzionalità ( ho visto ristoranti 5 volte più grandi con un terzo del servizio è funzionale molto molto meglio) sicuramente consigliato !!

Really nice and welcoming restaurant. The menu is full of dishes and ingredients and makes you want to try everything! The food is excellent, the atmosphere and service are excellent. We have already recommended it to several friends and we will definitely be back too!

I recently went to Trattoria del Cimino and I have to say it was one of the most authentic dining experiences I've ever had. It's not easy to find a place where you immediately feel at home, but that's exactly how it is here. The atmosphere is warm and familiar, with rustic decor that makes every customer feel welcomed as if they were part of the family. The menu offers simple dishes but full of flavour, prepared with the freshest, quality ingredients. I started with a homemade pasta, with a rich and tasty sauce that really won me over. Every bite seemed to tell the story of the passion they put into cooking. For the second course, I opted for grilled meat which was very tender and tasty, accompanied by fresh side dishes prepared with great care. But the real jewel in the crown of Trattoria del Cimino is the cellar. This is not the usual wine list, but a curated selection of local and national labels that the staff can recommend perfectly based on the dishes you choose. My bottle of red wine was a discovery, truly perfect to accompany the meal. The service was impeccable: attentive, friendly staff always ready to have a chat, without ever being intrusive. You can see that there is a great passion for what they do. If you are looking for a place to eat well, in a welcoming and genuine environment, Trattoria del Cimino is an absolute must-try. I will definitely be back! -

It wasn't the first time I went, I have to tell the truth but I can't help but give it full marks.
Immediately very good from the environment to the welcome, appetizer of fried porcini mushrooms and the best goat's cheese ever.
One of the best Amatriciana ever tried, al dente pasta and well-cooked sauce.
Experience in the well-stocked cellar with an excellent local red.
Chocolate salami for dessert and excellent coffee...
It's worth going to Caprarola just for this restaurant...

Locale rinnovato, colorato e stiloso. Personale molto accogliente, professionale e attento. La trattoria ha un ricco menù con prodotti locali e un menù con prodotti stagionali quindi “del giorno”. Non hanno la carta dei vini ma c’è un sommelier molto preparato che ti accompagna in cantina per vedere e scegliere la bottiglia giusta. Noi abbiamo scelto tutti piatti stagionali, piatti che rispettano il ciclo della natura. Ottimo il carpaccio di manzetta maremmana con funghi porcini, eccellente la pizzetta fritta con lardo e castagne caramellozate. I primi tutti molto buoni, un plauso particolare alla zuppa di ceci con castagne e gnocchetti e alle fettuccine ai funghi porcini della Tuscia. Di qualità anche i dolci.
Prezzi giusti calcolando i prodotti eccellenti.
Piacevole pranzo domenicale a 360 gradi.
