A charming, beautiful, tastefully decorated venue with a wine cellar offering a wide selection of wines. The price is fair for what you get: beautifully presented, beautifully prepared dishes made with excellent ingredients.
The staff, especially Andrea, who looked after us, was very friendly and professional. The carefully chosen background music made the atmosphere even more relaxing.
We were just passing through, but if we ever have the chance, we'll definitely be back.

What a fantastic experience! I started with the porcini mushroom hay: fragrant, creamy, and made with truly expertly crafted fresh pasta. Then came the carpaccio with sautéed mushrooms, light yet rich in flavor. The Viterbo-style wild boar won me over: tender and flavorful, it exudes all the local tradition. And finally, the hazelnut cake with zabaglione, soft and delicious, a perfect finish. At Trattoria del Cimino, you can feel the warmth and passion, just like home.

A few days ago, I went to Trattoria del Cimino with some friends. Even though we didn't have a reservation, they welcomed us warmly and seated us outside, in a truly charming historic alley. We ordered a Tuscia and pici all'amatriciana, accompanied by an excellent wine they recommended. After dinner, we also visited the cellar, impressed by the extensive wine list. We hadn't planned on dessert, but they brought us homemade meringues with our coffee, a kindness we greatly appreciated. An authentic and pleasant experience, worth repeating!

A truly special dinner! I started with the duck breast: flavorful, elegant, and made even more delicious by the warm bruschetta with salted butter, a surprising combination. Then came the pici all'amatriciana, handmade pasta with an authentic flavor that envelops you with every bite. Trattoria del Cimino was a fantastic discovery! The pappardelle with hare were spectacular, with a rich, fragrant sauce that left you wanting more. The pici all'amatriciana were also delicious, simple yet rich in flavor. The rabbit was tender and flavorful, a heart-warming dish. We stumbled upon Trattoria del Cimino by chance at lunchtime, without a reservation. Our initial plan was to visit the gardens of Palazzo Farnese, but with today's northerly wind, we preferred to warm up at the table. The restaurant, which dates back to the 14th century, is truly charming and welcoming. The dishes were fabulous: the exceptional baked potatoes, the tasty pici all'amatriciana, and the perfectly cooked wild boar. We didn't order dessert, even though the tempting dishes were coming out of the kitchen, but the always helpful and kind staff offered us homemade wine donuts. It was a lunch that made us feel right at home.

Food quality is excellent. Cooking even better: simply mixing ingredients do not make a restaurant good “per se”. Here they express quant they know. The result is extraordinary! Wine list to die for! Excellent experience at reasonable prices.

A passi dal Palazzo Farnese a Caprarola c'è questo bel ristorante nel ventre di un palazzo antico e dalle mura ciclopiche. Il locale è bello, ben arredato e decorato e comodi sono i tavoli e le sedie. Il servizio è rapido e cordiale è l'assistenza nella
