This restaurant offers unique dishes, slightly revisited from the standard fare, in a beautiful location. A good selection is available, with a wide but not overwhelming menu featuring traditional dishes with a modern twist.

A fantastic place. Good, refined food. Vegetables from the garden and grandma's eggplants. All in an elegant, meticulously maintained location.

I rarely write reviews, but when the quality is there, I think it's my duty. I went here during the week, one evening for dinner. My partner and I had an appetizer for two, including cured meats and cheeses, and bruschetta with ragù and eggplant in oil. EXCEPTIONAL APPETIZER. Two pappardelle with hare ragù followed, and I'm not exaggerating when I say they were among the best I've ever eaten. I appreciated and savored the homemade pasta. Truly well-made, as was the hazelnut dessert with Marscapone and Marsala. I will definitely be back to try the authentic amatriciana that everyone talks about and that has won numerous awards. The atmosphere is truly pleasant, with attention to detail. From the tables to the chairs to the cups... I LOVED EVERYTHING. The staff is qualified and kind. The prices? An experience I will fondly remember! We booked dinner at this restaurant based on the reviews we'd read, and I must say we weren't wrong. Therefore, I feel it's only right to reciprocate and offer a new review for a potential future diner. The restaurant itself appears very elegant and tastefully decorated, but that's not what I'll dwell on: the dishes speak for themselves, with exceptional attention to detail, thoughtful pairings, and, above all, the ingredients, of a quality that's hard to find these days. The courtesy and service were excellent. Thanks again for the wonderful surprise for my birthday, organized in collaboration with my partner. I highly recommend it!

A few days ago, I went to Trattoria del Cimino with some friends. Even though we didn't have a reservation, they welcomed us warmly and seated us outside, in a truly charming historic alley. We ordered a Tuscia and pici all'amatriciana, accompanied by an excellent wine they recommended. After dinner, we also visited the cellar, impressed by the extensive wine list. We hadn't planned on dessert, but they brought us homemade meringues with our coffee, a kindness we greatly appreciated. An authentic and pleasant experience, worth repeating!

What a fantastic experience! I started with the hay with porcini mushrooms: fragrant, creamy, and made with truly expertly crafted fresh pasta. Then came the carpaccio with sautéed mushrooms, light yet rich in flavor. The wild boar Viterbo-style won me over: tender and flavorful, it exudes all the local tradition. And finally, the hazelnut cake with zabaglione, soft and delicious, a perfect finish. At Trattoria del Cimino, you can feel the warmth and passion, just like home.
