A wonderful discovery at Trattoria Del Bollito in Alba.
For starters, an excellent vitello tonnato accompanied by a fine selection of cured meats and cheeses—everything was of exceptional quality.
The pasta with black truffle was absolutely delicious, bursting with flavor.
All of this was accompanied by a superb 2021 Barbaresco Pio Cesare. Authentic cuisine, impeccable ingredients, and truly excellent value for money in Alba. An address I wholeheartedly recommend.

There were six of us. The boiled meat was delicious, with three different sauces. For dessert, the hazelnut cake with zabaglione cream was fantastic. Excellent wine list. Perfect service. We'll definitely be back.

I had lunch with my wife on Saturday, February 7th. The welcome was friendly, the staff young and elegant, dressed in dark uniforms. The atmosphere was refined, yet with a mix of styles that couldn't be described as a typical Piedmontese trattoria. The ingredients were certainly high-quality, but I didn't experience the sensations I would have expected from a more traditional dish. The appetizer was very fresh raw meat, which didn't seem to have been hand-carved. The tongue in salsa verde was excellent. Two tajarin pasta dishes, served in a nice little pan, were generous portions, the second dish featuring a three-meat ragù and truffle shavings, and the quality was average. The Bonet con amaretto was very good. Two glasses of good-quality Nebbiolo. The price was average. I gave it three stars because I didn't feel immersed in the atmosphere of traditional Piedmont. I'd like to point out that in a restaurant that boasts the name "Trattoria del Bollito," this dish should be served from a trolley with the various cuts made freshly: this is why we ordered other dishes. The tables are too close together, and you eat elbow-to-elbow with other diners. I don't think I'll be back. It's a shame that only 5-star or one-star reviews are commented on. I think that reviews that politely highlight areas for improvement should be acknowledged.

A charming restaurant with a classic European feel and great attention to detail. The tartare and vitello tonnato were fresh and well balanced, and the boiled meat with vegetables and sauces was comforting and full of flavor. Calm service, cozy atmosphere, and a perfect place for a relaxed dinner with wine. Would happily come back

The braised beef is the best I've ever eaten. The meat was as soft as butter. And at the cashier, they offer you a piece of gianduja chocolate with hazelnuts 😍
It's definitely not a cheap place (about €45 per person with water, cover charge, appetizer, main course, and a glass of wine), but the quality of the food is excellent.
