There are evenings when you don't just dine, but are welcomed into a story of passion and expertise. At Trattoria Dal Taio, the raw ingredients aren't just ingredients; they're the undisputed protagonists of seemingly simple dishes, elevated by exquisite cooking and preparation.
The Service: The Beating Heart
The real added value? The dining room staff. Led by Davide, they are the backbone of this project: highly knowledgeable, empathetic, and deeply knowledgeable about both the menu and the wine list. Even though I was alone, they immediately made me feel at home, transforming a solitary dinner into a convivial and delightful experience.
The Food and Wine Journey
I greatly appreciated the flexibility of the kitchen: I was given the option of ordering half portions, allowing me to explore multiple appetizers and embark on a true journey through flavors. All this was expertly accompanied by a selection of "out of the ordinary" wines, chosen with a taste that defies the usual clichés.
The Verdict
Unfortunately, I live far away, but this is one of those memories that stays with me. As soon as the road brings me back to these parts, a stop at Dal Taio will be a must. Thank you so much, guys, for your dedication!

We booked to dine in the cave in April 2025... Today, January 17, 2026, we finally came to try this marvel.
The owner is incredibly kind and friendly.
Like the rest of the staff.
Excellent meat.
Delicious desserts.

A wonderful experience! The cold cuts and cheese platter was truly excellent and unique. Tagliolini with truffle and sliced beef with mustard were the main courses, truly superb! I drank the Ripasso, which was also excellent. Highly recommended. Beautiful location, excellent service 👍🏻

Trattoria Dal Taio in Parona is a true gem! 🌟 The restaurant is small but welcoming, with a natural cave that transports you to Umbria. The service is impeccable, with young, knowledgeable staff who recommend the best dishes.
The cuisine is the real highlight, with Umbrian specialties like strangozzi with truffles and grilled meats. The ingredients are fresh and high-quality, and the prices are reasonable!
Highly recommended!

A selection of cured meats, followed by two separate first courses: Pappardelle with Wild Boar and Strangozzi with Truffles.
Both exceeded expectations.
With two waters and coffee, €77.80.
Friendly and knowledgeable service, quick cooking, and beautifully plated dishes. The place is quite small, so reservations are recommended. Definitely worth trying at least once.
