Exceptional, everything was absolutely exquisite! The use of excellent olive oil was very noticeable in all the dishes, as was the use of high-quality ingredients. The handmade pasta was superb, and the vegetable soup was the best I've ever tasted. I'll definitely be back.

A pasta restaurant tucked away in an alley. The pasta was deliciously chewy, and the tomato soup was also delicious. The staff seemed a bit indifferent, but they still provided everything I needed.

Great steak tartare alla Carlo and excellent side order of greens with puree of cannelini beans. House red wine very quaffable. Nice atmosphere. Friendly service.

Umbria Jazz is a special event, always enjoyable. Unfortunately, this year, the experience at da Carlo ruined the start of the festival. The reservation was accepted for 12:30 PM, but only once we were seated were we informed that the table had to be vacated by 1:30 PM, a information not provided at the time of booking. On busy days, it's understandable to work shifts, but it's essential to notify the customer in advance. Without clarity, lunch becomes a rushed and unpleasant experience. This also made it impossible to have lunch with our friends who arrived shortly after. What a shame.

12/01/2026: This isn't my first time here, and I can confirm that the food is always excellent. Today, however, was my first time with a stroller, and the welcome was impeccable: a specially prepared table, lots of kindness and attention. Excellent food, simple yet refined, with quality ingredients. Highly recommended!

The truffle ciriole are an explosion of flavor, and the wild boar lasagne is one of the best I've ever had. The wild boar stew is incredibly tender and flavorful, and even the side dishes show uncommon attention to detail. The service is impeccable and contributes to making the experience relaxed and enjoyable in every way. A stop in San Gemini that I highly recommend to anyone looking for quality and a truly beautiful atmosphere.
