17/07/2024: Last night we were pampered by the impeccable service of this pearl in the heart of the historic center of San Gemini. The initial pink bubbles, a wonderful ciliegiolo, delicate and not at all anonymous, welcomed us, inebriating us right away. The welcome trio opened the dance, taking us into the hot Umbrian summer with melon, salmon, mushrooms, chocolate and cherry tomatoes. A small work of art that prepares us for the wonderful journey of flavors that awaited us. The chef surprised us with reinterpretations of local recipes using native and seasonal raw materials. The freshly made bread using sourdough starter went perfectly with each course. The pappardelle with porcini mushrooms "dirtied" by cherry tomatoes was so sweet that it made one think of a dessert. The fusilloni with potatoes would have satisfied even the most difficult palates with an unexpected, fresh, unique flavour. The fillet with potato lasagne was a journey within a journey. I didn't know potatoes could achieve certain levels of flavor. Ecstatic. Grilled guinea fowl combined with a sweet sauce is a welcome little joke that the chef offered to my guinea fowl-loving companion. The ending offered to us could not fail to be surprising. It is a trio of fruit tastings marinated in its own juice and flavored with spices and herbs. I'm not a fruit lover but I think I would eat plenty of it if it were always served this way. The sommeliers were able to match the wines to our dishes, giving us a wonderful journey through local and non-local wineries, enriching the incredible experience we had with professionalism, kindness and wisdom. The initial rosé sparkling wine started a magic that continued with an expertly recommended Arneis paired with the important first courses we chose. Subsequently, Sagrantino dominated the scene, supporting the fillet with elegance and decision. To conclude we ordered a very particular digestive from the Umbrian areas. We were enchanted by the story of its creator and drinking it with such awareness made it even tastier and more special. Our summer cuddle ended like this, on a quiet and characteristic terrace overlooking the sunset among the Umbrian hills at the foot of a bell tower. Relaxed, really full and very happy.
