08/04/2026: We visited Chiostro degli Scolopi and the experience was excellent in every way.
The quality of the ingredients is top-notch, with great attention to local, zero-mile products. The homemade breads are among the best we've ever tasted, as are the fried meatballs, simple yet perfect. The artichoke puree and crispy crumble, enriched with a high-quality olive oil, are also excellent.
The sagne torte with free-range rooster ragù deserves a special mention: handmade pasta and authentic flavors. The beef tartare is fresh and well-balanced.
The absolute highlight is the steak: over 1200 grams, presented and prepared in front of the guests, cooked to perfection and accompanied by a selection of salts that further enhance the meat.

Highly recommended for those seeking Salento tradition with an innovative twist.
07/04/2026: We dined here on Easter Monday. We only realized afterwards that many families would be eating in the restaurant on Easter Monday, rather than in the evening. We had reserved in advance for the evening. Despite the fact that Antonio and his team had been busy all afternoon, they still took the trouble to welcome us. We were the only guests and were spoiled culinarily with homemade bread, focaccia, and a delicious amuse-bouche featuring very tasty aubergine with a lovely, firm texture. The spaghetti al noci was top-notch, as were the osso buco and the lamb shanks, all enjoyed with a glass of red wine from Manduria. We declined dessert. As an aperitif, we were served homemade limoncello. Antonio and your team, thank you for a wonderful culinary evening. Best regards, Ruut & Ilse
