This osteria is a prime example of how authentic, high-quality cuisine can be prepared without the shortcuts of more prestigious establishments, which rely on ready-made dishes full of preservatives, where the kitchen is merely an ornament and is used only to reheat artificial dishes. I would encourage people to pay more attention to what they eat, to follow trends less, and to place more importance on substance and quality.
