We're back after a year, and Sara Scarsella and Matteo Compagnucci have confirmed their reputation as one of the best restaurants in Lazio. Their cuisine is high-end, rooted in the local area, yet clearly influenced by the two chefs' experiences abroad. Their use of fermentation enhances the ingredients and also enhances the accompanying tastings with a rich selection of kombucha. The dining room staff is as skilled as the kitchen, as is the sommelier, whose selections perfectly complement the dishes.

I've seen this restaurant born and grow, and I hold it dear.
It's been a few years since I've visited the Sintesi team, and everything is wonderful.
A seven-course tasting menu featuring fish, meat, and vegetables.
A riot of flavors and textures with a unique balance. Science applied to the kitchen, technical perfection.

Exceptional restaurant. Extraordinary staff, polite, professional, present but not overbearing. The place is well-maintained, clean, and beautiful to look at! The only negative: the moss stuck to the ceiling. NO! The likelihood of falling into a plate: extremely high. The food: excellent, prepared with attention to detail, beautiful to look at, delicious to smell, and delicious to taste. A well-crafted culinary journey. Well done.

Seconda volta in questo stupendo ristorante e posso solo confermare la bravura di tutti dalla cucina, alla sala, al sommelier. Piatti sempre stupendi alla vista, golosi, eleganti, tecnici il giusto senza mai strafare, pani eccellenti, porzioni corrette, abbinamento vini eccellente, tra Italia, Francia e Spagna. Siete un riferimento assoluto per il nostro territorio e vi auguro solo di crescere lo meritate veramente.
Grazie per la stupenda serata e ci rivedremo sicuramente.

Come da titolo, una gran bella scoperta. Abbiamo festeggiato il compleanno di mia moglie in questo bel ristorante, accogliente, moderno e con un ottimo menù. Particolarmente apprezzati gli abbinamenti con frutti e verdure fermentate. Il piatto che mi ha particolarmente colpito è stato un ramen con il coregone del lago di Nemi. Tutto il menù è stato all’altezza delle aspettative, dal servizio del pane fino al dolce, spettacolare il gelato al sedano.Veramente un bel posto, da consigliare e provare
