My wife and I recently visited Palermo and had the great pleasure of dining at AlBI 131. We were delighted with the welcome we received, the decor, artwork and most of all the wonderful food and wine that we were served. It was one of the highlights of our visit. This restaurant deserves to be recognised for its fine dining experience and the friendliness of the hosts.

ALIBI: an experience. With their "4 Passi" tasting menu (four courses chosen by the guest), they took us on a gastronomic journey with dishes featuring strong, bold flavors that showcase the flavors of our land, with some influences from other cultures. The research and study of the products and the various pairings was impeccable, the preparation top-notch, and signature cuisine that brings everything together in the various dishes and allows you to fully appreciate each individual ingredient. Starting immediately with the amuse bouche, a real surprise: the tartlet topped with a hemisphere of liquid caponata was an "explosion of flavor." The appetizer: octopus with a texture we'd never experienced before, which, combined with the smoked provola sauce, embraced you; the semi-crunchy part of the sweet and sour onion provided the perfect acidity and balanced the flavors, and with the bitterness of the charred escarole leaves, it was truly a triumph of flavor. Moving on to the conchiglioni, a delicious first course that will make you feel good and pamper you with its soft, flavorful filling, with just the right amount of saltiness, accentuated by the trout roe, wrapped in a scampi and coconut sauce that made the dish a delight. Then we move on to the second course: a capone with a perfect consistency and cooking, aided by the sauces that gave the dish freshness and acidity. Finally, the desserts, both delicious: the salted caramel namelaka lightened by orange jelly, and the very balanced second course: the incredibly delicious white chocolate mousse topped with a passion fruit jelly and garnished with mint leaves, which is truly that unexpected touch that transforms the dish and elevates it. Finally, the small pastries were the perfect finale to this menu. Everything was paired with a wine recommended by the maître d', the CVA 1934, a white blend of Grillo and Chardonnay that accompanied us on this magnificent journey. Also noteworthy is the staff's expertise and friendliness. Compliments to chefs Alice and Liborio. Highly recommended! We'll be back soon!

I've been to Alibi twice now, and I can say without hesitation that it's one of the best gastronomic experiences I've had in Palermo. Each dish combines technique, creativity, and excellent ingredients, but what really makes the difference is the soul you can feel behind every dish. Special praise to the chefs and owners, Alice and Liborio, who create a truly unique experience. I've eaten at starred restaurants that have thrilled me far less. Here, I've found more personality, more research, and more passion. That's why I honestly wonder why it's not yet in the Michelin Guide. A special place, capable of leaving its mark. We'd been curious about this place for a while and wanted to try their dishes, until, on our anniversary—our seventeenth to be precise—we decided to book and treat ourselves to this experience. The dinner exceeded our expectations, both for the quality of the dishes, which were top-notch, and for the service, which was attentive and professional, without sacrificing those more "informal" touches that we love so much and that make us feel at home. Starting with the surprising and intriguing amuse bouche, moving on to the appetizers (in our opinion the highlight of the evening), and then being delighted by first and second courses that lived up to expectations and delicious desserts, we had a truly remarkable gastronomic journey. Both the owners, who are also the chefs, and the dining room staff helped make this occasion memorable with their friendliness and courtesy. We'll definitely be back and we can't wait for our next anniversary!

Ristorante 131 - Alibi, located on Via della Libertà in Palermo, was a pleasant discovery. The atmosphere is relaxing and the service impeccable. Erica and Samuele are extremely kind, friendly, and professional. We had the pleasure of meeting the chef, who prepared delicious dishes with the freshest and finest ingredients. See you next time. What can I say, the guys have talent, they'll grow up and one day they'll have a nice Michelin star :-D. Perfect evening, food: a concentration of Sicily in every bite, they were always smiling and helpful, even with my elderly mother. Top evening.
