We had the pleasure of experiencing Olio even before the Michelin recognition, and had some truly memorable experiences. For this very reason, we returned with high expectations, confident that we would rediscover and perhaps see that same excellence further developed.
Unfortunately, the initial impression wasn't up to par: upon entering, the setting seemed sloppy, with tables not yet set and a general feeling of "emptiness" that contrasts with what one would normally expect from a starred restaurant. First impressions, especially in settings of this caliber, are crucial.
Even the service, while courteous and friendly, conveyed a certain tiredness. One sensed a young team, with potential, but still growing. And this is precisely where a Michelin-starred restaurant should make the difference: in the details, in the precision, in the consistency. Some aspects, such as offering a wine tasting before service, are fundamental attentions that should not be missing.
The overall feeling is that something, compared to the past, has been slightly lost along the path to the star. Not so much in its intrinsic quality, but in the energy and care that made the experience truly special.
Olio's potential, however, remains undeniable. Precisely for this reason, we sincerely invite you to rediscover the strength, attention to detail, and hunger for excellence that made him unforgettable.
