Located in the village of Moggiona, at the gateway to the Casentino Forests, just a few kilometers from the mystical Camaldoli hermitage, Mater welcomed us in its winter garb, with a roaring fireplace and a menu that demonstrated, not only on the menu but also on the palate, great sensitivity, knowledge, respect for ingredients and technique, balance, and above all, a connection with nature and the forest. Marta and the waiters provided us with a warm and attentive welcome, providing timely advice and guidance on the dishes, menu and wine selections, as well as descriptions that gave depth and history to the dishes. The chefs, bustling like busy bees in the open kitchen, prepared dishes with layered and balanced flavors, reawakening memories, connections, and emotions, delicately and profoundly, in a journey of awareness of the land, the forest, our origins, and the unique characteristics of the region. Also greatly appreciated is the rediscovery and valorization of "humble" ingredients (acorns, for example), which were often a fundamental addition to our grandparents' diets during less prosperous periods of history and which here become a source of wealth and gratitude. Pampered and more!
A small restaurant with limited seating but plenty to offer: refined cuisine with a strong local flavour (I really enjoyed the trout and guinea fowl) with a knowledgeable, helpful, and friendly staff. Professionalism is paramount here, and it's definitely worth trying the dishes and soaking up the atmosphere.
It may seem rude to say, but unlike other similar restaurants, they don't feel like it here!
Personally, I appreciated the option to pair them with quality beers.

For my partner's birthday, I decided to treat him to lunch at this restaurant.
We chose a super quiet Sunday; we were the only guests in the restaurant, and I have to say it was a wonderful experience.
Unusual pairings, where the acidity of the ingredients dominates, and research and original treatments of the ingredients.
A culinary journey into the most authentic and "wild" Casentino.
Highly recommended.
