Avevo molte aspettative su questo ristorante. E qualcuna è stata disattesa. Ci è piaciuto l'ambiente, il locale, la vista e ci sono piaciuti molto alcuni piatti del menu "in profondità ": le sfere sono state un'esplosione di sensazioni e ho trovato ottime le animelle al limone nero e l'insalatina selvaggia con sorbetto all'aceto di peperone, accompagnata da un delizioso pane croccante
I piatti si sono caratterizzati per accostamenti insoliti e In alcuni abbiamo trovato una prevalenza di sapori forti , talora aspri e con note amare.
Poco significativa e deludente la parte dessert.
Pienamente d'accordo sul discorso natura, erbe, fiori eccetera, ma, per chi, come noi, è nato nella campagna e vissuto sempre in mezzo a prati e boschi, queste atmosfere sono normali.
Ho letto tanto entusiasmo per Marta, che ha guidato la degustazione di diversi commensali. Noi l'abbiamo vista all'inizio e alla fine del nostro percorso. I nostri accompagnatori sono stati essenziali. Forse se avessimo avuto l'accompagnamento di Marta, avrebbe dato un senso ai vari piatti, ne avrebbe illustrato meglio le caratteristiche e avremmo potuto apprezzarli appieno.

A modern gem in the middle of the Casentino forests. Restaurant with open kitchen and innovative approach while using local ingredients and partly grown by them. We also stayed in the adjoining farmhouse and had a great time finding excellent value for money (large room with fireplace and sauna). Excellent escape route in Emilia Romagna!

Finding myself in the area and having heard very good things about it, I decided to have dinner at Mater: it turned out to be a wonderful discovery. From the moment you enter you can breathe a hint of wood and forest, in perfect harmony with the essence that guides the cuisine of this place: a real journey into the magical forests of Casentino. The tasting menu amazed me, the serious but not serious service (or unnecessarily haughty, as unfortunately happens in many other restaurants of this caliber) made the evening relaxing and pleasant. I also recommend staying in one of the suites of The Three Barons, right next to the restaurant.
Thank you Marta for your friendliness and warm welcome and congratulations to chef Filippo. It's a pleasure to know about the existence of companies that are attentive to sustainability and the territory like yours and... Thanks also for the "flowery" menu, it's a beautiful souvenir. If I can, we will certainly see each other again.

Moggiona, Arezzo. In the middle of the Casentino forest, a stone's throw from Camaldoli, there is this splendid gourmet restaurant. Open kitchen, large room and space between the tables. The cuisine in the hands of chef Filippo Baroni is a spectacle of taste, above all a riot of acid and bitterness, with quality ingredients and a touch of the forest/vegetable garden in every dish. The landlady, Marta Bidi. Knowledge and awareness of herbs and their use, perfect in the room at all times and for every request. The staff always perfect and ready. A place worth visiting if in the area, or worth looking for!!

Talking about emotions is always difficult, at least one's own, however the "depth" of the food tasted is truly above all expectations. Elegance, magnificence, compositions, acts, gestures and tasting represent the history of knowing how to combine flavors and beauty. It is worth experiencing those emotions in which food is music, expertly balanced and directed by skilled hands who cook with soul and heart. There is no one dish better than the other. Excellence exists in everyone.
