Republic in Gallarate offers a different take on the traditional aperitivo. For €11, you can get a cocktail plus a mixed platter with sushi. The atmosphere is modern and welcoming (I'd improve the lighting), perfect for an evening with friends. They also offer à la carte dishes; the grilled spaghetti is very good. The service is courteous and professional, and the prices are average. A very nice place for a different aperitivo. They offer aperisushi, and for €11 per person, you can have an excellent drink and a delicious platter of sushi, spring rolls, edamame, and pizza. The platter isn't very large, but it's perfect for a light aperitivo. The atmosphere is relaxed, with both indoor and outdoor seating.

16/02/2026: The atmosphere is that of a very classic and traditional restaurant, with a timeless feel that doesn't seek modernity. ​Being a restaurant specializing in seafood, my expectations were high. I ordered spaghetti with clams, but unfortunately the dish wasn't memorable: well-prepared but lacking the burst of flavor or intensity one would expect from a restaurant with this name. ​The real highlight of the evening, however, came with dessert: a spectacular slice of chocolate, walnut, and chestnut cake by Sal De Riso. An excellent choice of supplier that significantly elevated the dinner's finale. ​In summary: 3 stars. An average experience where the seafood cuisine could be improved, but which ended on a high note thanks to the signature pastry.
