Ravioleria Artigianale Il Borgo In Pisa

I had a mixed portion last night, on my way to another restaurant, but I was struck by this little shop, very white and very clean. I went in and after taking my portion I went home to consume it. Beautiful packaging and also nice that in addition to the chopsticks I also got a free sauce. Really excellent ravioli. Perhaps I have never eaten better.

Strange how sometimes, despite having frequented a place for a long time, you then forget to have the common sense to leave a review. Personally, I've been going to this ravioli shop for a few years, practically since they opened and they were located a few meters away from where I am now (I'm talking about 20/30 metres) and I've always had a good time. The little place is run by a couple; He's Italian and she's Chinese, both very nice and friendly! They only make shuijiao (i.e. boiled jiaozi), either freshly cooked to eat in paper containers or raw to take away. The owner told me that if you wanted (at home, I mean) you could also put them in a pan and cook them like Japanese gyouza, but they didn't turn out very well this way... better boiled, in my opinion. The value for money is excellent and if you take them raw they also cost a little less. They are certainly the best jiaozi in Pisa! I recommend booking them in advance, especially because the place is very small and if you come at "peak" time, there is the risk of waiting a while between riders and waiting customers. However, it is absolutely worth one (or more) visit(s)!

Yinling is very friendly and takes great care in preparing the ravioli. There are 8 incredible flavors, worth trying!

In my opinion, a perfectly cooked gyoza. Gently prepared, very well stuffed, wonderful fillings, I suggest ordering the mixed dish, where you can enjoy all the flavors. Very clean, organized, and I highly recommend it.
