I've known Quattroventi for many years, and even though I no longer live in Palermo, this restaurant has always been a point of reference every time I return to the city. I've returned now, after a year's absence, and I must say I'm genuinely surprised by the change in pace the restaurant has undertaken.
The real innovation was the introduction of dry-aging on the fish: a technique that, when applied to local seafood, enhances flavors in a way I've never experienced elsewhere. The raw gurnard, albacore tuna, and snapper were truly unique; the dry-aged tuna tartare is indescribable. The smoked fish, after dry-aging, reaches absolute levels of excellence. The first courses confirmed the exceptional quality: the lightest couscous and a cacio e pepe with caciocavallo Ragusano cheese that I hadn't remembered enjoying with such joy. Even though we were already full, we were tempted by the pistachio absolute, which is actually a deconstructed Dubai chocolate, finally free of the excessive sugars of industrial products.
I can't believe Quattroventi isn't mentioned in the Michelin Guide, which instead lists several mediocre establishments.
I've tried every Michelin-starred restaurant in Palermo and its province: none, in my opinion, truly represents the evolution of Palermo cuisine or showcases local seafood like this restaurant does.

I thought I'd already tried all the best restaurants in Palermo, and I had my own personal ranking that I hardly felt I needed to change, but Quattro Venti has shaken things up and has rightfully entered my top three in the Sicilian capital. Located on a side street, yet still centrally located (a crossroads of the shopping street), the restaurant immediately presents itself as original and elegant, but certainly not snobbish. The wait staff is top-notch, friendly, I'd say impeccable. The chef occasionally pops into the dining room to make sure his "creations" are appreciated, which is understandable if, as I think I've gathered, he's also the owner of the restaurant. The dishes are a triumph of flavors, combinations that are a joy for the palate, with careful use of raw materials, and strictly fresh fish. Meat options are also available. I had a seafood salad that my taste buds still remember, a cacio e pepe, and even though I was full, I couldn't resist the grilled amberjack, delicious. To conclude, the best lemon ice cream (with ginger) I've ever eaten. Satisfied, I go to the cashier; the bill was more than fair and balanced for how much and how well I ate. Full marks, the only complaint was that the service was a bit too slow, but I can forgive them for that.

I'm glad I came here on my last day in Palermo. The service and ambiance are a 5/5. The food is a 7/5. There's nothing to complain about here. The price is absolutely reasonable. It's an insider tip, as it's outside the city center and not too crowded with tourists.

We had a wonderful evening at Quatroventi. A great opportunity to indulge during our stay in Palermo with Sicilian cuisine that was both typical and refined. To start, we enjoyed a local gin and tonic as appetizers, then we enjoyed the Levente tasting menu, which featured the chef's specialties. It was exclusively seafood, a real treat for me, as I'm not a big fan of meat. The pairing with local wines was perfect! The staff was attentive and friendly.
A quick word of reassurance about the neighborhood near the port. We walked there and back from the historic center. While you may have to go through some working-class neighborhoods, that doesn't mean it's dangerous! You can also avoid the smaller streets and stick to the more secure main roads.
For us, it was a great opportunity to get out of the historic center and see Palermo!

È il mio ristorante preferito a Palermo!
Ogni volta che desidero concedermi un’ottima cena, torno qui: piatti ricercati, sapori impeccabili e un’atmosfera sempre piacevole. Tutto è squisito, curato nei minimi dettagli.
Molto apprezzato anche il gesto dello chef, che a fine serata passa tra i tavoli per salutare e sincerarsi che tutto sia stato di gradimento.
