Every summer it is a fixed stop on our holidays in Marina di Carrara.
Excellent service even if the place is small, excellent hot (Farinata/Cecina)... and pizza in a pan cooked in a wood-fired oven, very good.

I returned from Vanilla after many years. My partner and I got two takeaway pizzas and they were really good. The dough is light, very digestible, in fact we have taken pizzas on another occasion, plus the "hot" for those who are not local the "hot hot", here with us, it is the farinata, the cecina or the cake for the people of Livorno! That's good too! One evening we went to eat at a pizzeria, thinking we'd do it first, because then we had to meet up with some friends. The pizza is always good, but the service is a little slow and needs improvement. A note of merit goes to the pizza chef. The second time we got take-away pizza, I asked for a Rustica without aubergines, he made it again because whoever had stuffed it had made a mistake and had put them in. Not bad, I would have eaten it anyway, even though I don't like aubergines. He behaved correctly and professionally! My opinion is positive and I recommend going there!

Very nice lochescion, anemic pizza, very strange dough.
At first sight it looked frozen.
Looking underneath you could see little green specks. I don't know.

A typical Tuscan pizzeria run by a certified pizza chef, who prepares a truly excellent quality farinata (in hot Carrara style) or cecina, particularly if eaten on the spot: crunchy, not greasy, and tasty.
We wanted to try the typical Carrara cuisine and so we took tagliatelle with beans and stuffed muscles... truly exceptional.... like the old days!!!
Other dishes to try are tordelli with ragù, Carrarese tripe, tarabaccolara gnocchi and other typical dishes.
The cleanliness of the place and the people is 6 stars, because it is rare, like their courtesy and availability.
If you want a typical Carrara dish, you don't need to travel around Carrara much, try the Vanilla... you'll thank me

a typical Tuscan pizzeria managed by a pizza maker doc. We wanted to try the typical Carrarese cuisine and so we took tagliorini in beans and stuffed muscles ... truly exceptional .... like old times !!! Other dishes to try are the tordelli al ragù, ... the tripe alla carrarese, gnocchi alla tarabaccolara and other typical dishes.
If you want a typical Carrara dish you don't need to go around much for Carrara, try the Vanilla .... you will thank me.
