I've eaten at this pizzeria, or maybe not...
actually, I went specifically to try their pizzas, which everyone had been talking about for a while.
This historic establishment, run by Andrea Bongi, celebrates its seventieth anniversary this year and a few days ago earned two stars in the Gambero Rosso Pizzeria d'Italia 2026 guide. It also received a mention among the excellent pizzerias in the 50 Top Pizza Italia 2025 guide.
I chose a Casentinese with fiordilatte from Campania, porcini mushrooms, and Grigio del Casentino prosciutto. My husband chose a Donato with bardiccio, caramelized onion, and Tuscan pecorino.
Although white pizzas aren't my favorite, it was one of the best pizzas I've ever eaten. The dough was like a cloud, super light and easy to digest, and the ingredients were excellent. I can't wait to go back, because if the white pizza had this effect on me, who knows how much I'll love the red ones!

I'm happy to update my review of Pizzeria Centrale following the change in management. I've become a regular here thanks to the refined pizzas, which pay particular attention to the finest ingredients. The new owner and the very friendly and helpful staff have done a great job. Prices are always reasonable and the quality/price ratio is excellent. The place is small, so reservations are often necessary.

A wonderful surprise.
Delicious pizza, top-quality and carefully selected ingredients, showcasing the local area.
The beers are good, and the dressing oil (Gramigna Grullo oil) is out of this world.
What more could you want? A slice of... tarese?
They have that too.
It's addictive, be careful.

The place is a bit small, but the service is fast and the waitresses are friendly.
The pizzas are good (I had a classic Margherita).
I recommend the tortello alla griglia with Pratomagno ham, excellent.
The pizza menu is very varied, with something for everyone.
The dough is good, the crust is small (I prefer it thicker, like they do in Naples), the center of the pizza is too thin, and the pizza arrived with a slightly burned edge.
All in all, the pizza is good (not excellent, as some reviews say), but still worthy of a 4-star rating.
The final price is excellent; finally, a pizzeria that doesn't inflate its prices.
