17/02/2026: I had high expectations, but L'Operaio dei Fornelli far exceeded them.
The atmosphere is refined and welcoming: from the moment you enter, you're captivated by a well-stocked wine cellar, with numerous labels, many lesser-known but of great quality, allowing you to enjoy great wines at affordable prices. On the walls, famous actors and Venetian phrases find an original and perfectly executed mix.
The dining room is simple but decorated with almost obsessive attention to detail. The furnishings are comfortable without being invasive; several paintings, including reproductions of famous artists, enrich the atmosphere without weighing it down.
The real revelation, however, was the cuisine. I tried the Paduan chicken salad served with candied mustard: the sweet and spicy mustard enhanced the tender and succulent shredded chicken. Next, a great classic of Venetian cuisine: musso with polenta. Tender and flavorful meat, surely cooked for many hours over a very low flame, with a balanced, never-overpowering spiciness.
For dessert, an unsweetened panna cotta accompanied by Friularo sauces: their natural acidity perfectly balanced the richness of the cream, creating a harmonious and never cloying finish.
The dishes reveal a deep knowledge of the region, the raw materials, and the production techniques. A strong attachment to tradition is evident, enhanced with an elegant touch of innovation.
