The color is golden, with light browning from a wood oven: a perfect tan, worthy of a trade magazine. At the first cut, the blade slides without resistance: crunchy underneath, but soft inside, like a caress between two extremes. The scent of buffalo mozzarella is released immediately, with fresh lactic notes and a vaguely herbaceous finish, a sign of authenticity. The tomato? San Marzano, sweet and slightly acidic, well balanced, not intrusive. In the mouth, the mixture melts elegantly: a slightly nutty aftertaste, due to the expert cooking.
