I chose Piano 35 with naturally high expectations, given that it's a Michelin-starred restaurant and such a well-known address in Turin. The experience, however, was overall below my expectations.
The quality of the ingredients is unquestionable: fresh, well-selected, and of excellent quality. Unfortunately, however, the technique and preparation failed to fully showcase them. In more than one course, I felt the execution was correct but lacking in flair, with flavors that weren't punchy and pairings that didn't truly enhance the product.
Some courses lacked balance in flavor, and in a couple of cases, the technique was almost nonexistent. For example, in our case, we opted for the "Giro d'Italia" menu, and the artichoke alla giudia was cold, salty, and even very rubbery. I'm not a chef, but I'm certain that dish isn't worthy of a Michelin star.
In a context of this caliber, one expects the cuisine to transform excellent ingredients into a memorable experience. Here, however, the result was good, but not thrilling.
The location remains evocative and the service "fairly" professional, but from a gastronomic standpoint, I expected more personality and depth.

Last night my wife and I decided to treat ourselves a bit and we chose Piano 35 and we were not wrong. The service is impeccable, all the dishes are, in addition to being perfectly presented, with flavors that are at times traditional but excellent and at times surprising. The bio-climatic greenhouse and the view from the panoramic north terrace make the evening more than a dinner, a real experience to be enjoyed. Last but not least, the restaurant manager deserves an additional mention for his elegant preparation, presence and professionalism. All the staff made us feel at home from the moment we entered the reception until we left, leaving us with a memory of a memorable evening that we will definitely repeat, even during the lunch break as recommended. The price is high but absolutely justified by the overall service offered.

The cuisine is substantial, enhanced by a truly interesting drink pairing, and recommended for a full experience. However, I didn't find the unique character to call it a fully Michelin-starred experience. The service is technically impeccable but overly present, at times almost pushy rather than fluid.

A modern and charming place, all around us the panorama of Turin with its artistic lights.
We dined by choosing from the menus created by the chef, a Piedmontese menu with 6 courses for me and 4 for my daughter, while my wife opted for the Neither Meat Nor Fish menu. We were all extremely satisfied with our choices. My very personal ranking: the ravioli is unforgettable, the veal with tuna sauce and the beef incredibly tender. I personally found the smoky pumpkin a bit too strong, while my daughter, on the other hand, loved it and ranked the veal with tuna sauce first, followed by the beef, and finally the ravioli. For my wife, the onion and cabbage, cabbage, cabbage was the highlight. The amuse bouche and small pastries were also excellent. The 3-glass menu pleasantly surprised me: two white wines and a red paired perfectly with my menu. Last but not least, the ever-present yet discreet service and the attention paid to my daughter made the evening decidedly pleasant, which concluded with a stroll in the bioclimatic greenhouse and up to the 37th floor to admire the view.

Refined food and highly sophisticated creations. Professional, indeed, very professional staff. A very positive experience. A four-course dinner without wine and water, I think, was €120 per person; a six-course dinner was €160.

Perhaps because, except on a plane, I'd never eaten so close to God, or perhaps because we were almost in heaven, but the experience at the 35th-floor restaurant in the San Paolo skyscraper was truly divine—that is, of wine and good food.
Six courses preceded by a small aperitif that surprises you from the first bite and followed by delicious dishes that, one after the other, envelop your palate. We chose the Piedmontese menu and had no regrets. Each course amazes you and takes you a little higher, and when the soup arrives, a small miracle happens, while the wines carefully selected by the sommelier enhance the pleasure of an excellent dinner. After dessert, a coffee accompanied by small pastries, an undeniable Piedmontese delight. All in a beautiful setting that fills the eyes and the heart. At around €220 per person, not a small price, but absolutely justified, it will remain an experience etched in our memory. We promise to return.
