Excellent food, perfect breakfast, amazing croissants, and definitely the pastry chef's touch, though I highly doubt he's local. Truly huge and delicious, with a wide selection and reasonable prices.
For aperitivo, La Vaga Matta is now a historic spot. It's fair to say that between Pontedera and Fornacette, it's set the standard and led the way, even if it's recently raised its prices.
In any case, a must-see for the Valdera area.

Nice place, welcoming staff, attentive to the needs of a family. Good food quality. They also offer side dishes and meat in addition to carbohydrates. The price is more than reasonable. The coffee is also good. The pastry shop is worth trying.

I have breakfast at this bar a few times and I've noticed that lately they tend to reduce the content of the cappuccino and increase the price.

During the training days, having La Voglia Matta right next door was a real blessing.
