Very good panzerottini with quince jam.

While away on business, I had the opportunity to get to know the historic center of Sammichele di Bari and one of the historic bakeries in the area. For us Apulians, bread has a very special meaning. Immediately inside you are stunned by the beauty of the products and their scents. Since it's lunch time I dine with an excellent Bari focaccia, pure mastery, and since the family doesn't follow me I bring a bit of the local tradition home: the slowfood presidium focaccia a Libro that I show the photos. Focaccia a Libro, on the Gargano it is not customary to prepare it, is a spectacle that does not last long, but the photos remain.

We went there to get the book focaccia, which we then ate. Good.

This bakery speaks of history, tradition and mastery in keeping the true Apulian tradition alive! A bakery built around a wood-fired oven, the real wood-fired oven of the past, as big as a room! Very happy to have met the owners and tasted their products... AMAZING!

Ho assaporato a casa di amici la focaccia a libro integrale, specialità particolare e unica aggiungo: una delizia che mi ripropongo di comprare per portarla e farla conoscere in Piemonte ai miei familiari alla prima occasione. Eccezionale!!

Questo piccolo panificio va assolutamente visitato se si è a Sammichele di Bari o nei dintorni per la qualità dei suoi prodotti. Vivamente consigliato il pasticcio di cipolle e la “fcazz a livre” una specie di focaccia arrotolata farcita con pomodorini, olive e origano. Ottima anche la versione integrale con uvetta passa. Squisiti e appetitosi anche i primi da asporto sempre cotti al momento e rispondenti alla tradizione pugliese: fave e cicorie, riso patate e cozze, peperoni ripieni, verdure gratinate e tanto altro. Io ci vado ogni volta che posso per là genuinità del cibo che mi ricorda i sapori di ciò che mi preparava mia nonna quando ero bambina!
