Authentic Rome: Osteria Sanmarzano
If you're looking for a corner of Rome where substance matters more than appearance [even if the place is delightful], Osteria Sanmarzano is a must-see. Located in the San Giovanni neighborhood, it has the typical character of old-fashioned osterias, but with a touch of modern care that never hurts.
What impressed me:
The Carbonara [the real thing]: There's no point beating around the bush, you come here for the classics. Their carbonara is perfectly creamy, with crispy bacon that's addictive. The amatriciana also deserves an honorable mention.
Top-quality ingredients: The name is no coincidence. Tomato is king in the kitchen and is present in every sauce. The freshness of the ingredients transforms even the simplest dish into something memorable.
Roman hospitality: The staff is incredibly friendly, with that genuine, friendly attitude that makes you feel right at home, even if it's your first time. There's none of that annoying rush to vacate your table that you find in many touristy places.
A little tip:
Don't skip the appetizers. Their fried foods are dry, crispy, and perfect for filling your stomach while you wait for the main courses. And leave a little room for the house tiramisu: it's worth it.
Final verdict: An honest, welcoming place with cuisine that speaks the local language without too many frills. Excellent value for money for a place in the heart of Rome.

Fifteen of us had lunch on a Sunday at this quiet spot. The restaurant is quite spacious and bright. They serve traditional dishes, but if you're looking for a touch of innovation, you've come to the right place. Artichokes alla Giudea were perfect, meatballs in creamy carbonara sauce were out of this world, the pinsa with zucchini blossoms, tartare, stracciata, and truffle was delicious, and the pici alla gricia, carbonara, cacio e pepe, and amatriciana were spectacular! We didn't order main courses because we were completely satisfied, but I'm sure the quality would have been just as high. The desserts also received a thumbs-up. The only slight drawback was the wine, as we didn't find anything local. However, the service was really fast despite the restaurant being full. The staff was willing to explain and recommend the dishes, all topped off with smiles and a lot of friendliness. The prices are reasonable for the quality of the ingredients. In short, a sublime experience, one we'd recommend and return without a doubt. Well done everyone!

This is my third time at this restaurant in about eight months, and every time I'm truly satisfied. The quality of the food is consistent, the dishes are carefully crafted, and you can taste the attention to the ingredients. The service is always friendly, and the atmosphere is pleasant, something that's not always a given. It's a place I'll gladly return to and I recommend it without hesitation.
