My assessment of Kobuta is a combination of the comments I'd make about the ideas of a creative department (that's my job) and my experiences as a lifelong manager with a trolley. In order:
1) Kobuta was born from a madness: that of seeking unions between two islands that are very distant but very close in terms of history and character: Japan and the beloved Sardinia. Therefore, the idea gets a high rating.
2) The food. I had the opportunity to "challenge" this idea by tasting three different dishes from the menu: a revisited fregola, a long-cooked pork capocollo, and a vegetable tempura. Here too, the rating is high for the quality of the ingredients and the cooking. The plating could be improved with bases that vary depending on the contents. Fregola on a flat plate is fine, but why not serve tempura in a vertical bucket like they do in Japan? Anyway, very good.
3) The drink. I have a suggestion for the owners and the chef, and I'm doing it to raise the bar: think about a possible food-drink pairing. For example, without being offered an option, I decided to pair the pork with a slightly citrusy sake (a failed pairing) and the tempura with a dry, pure-fermented sake (a perfect choice). Consequently, it would make sense to include a pairing suggested by your sommelier on the menu, either based on Sardinian wines (but be careful not to become a Vermentinificio like half of Sardinia already is: perhaps look among artisanal producers with heroic vineyards or innovative blends) or based on Japanese sake, paired with thoughtful expression, seeking harmony between dish and drink. Here too, the two islands must meet.
In short: Kobuta is a great idea, it has great personality, and it inspires a strong desire to return, this time to give you my fifth star.

Japanese trattoria. We ordered horse tataki, gyoza, and ramen, along with beer and dessert. Everything was delicious, well-prepared, and above all, fresh. Highly recommended, even by those who've eaten ramen in Japan. The menu also features a nod to Sardinian cuisine. The atmosphere is pleasant and relaxed. The staff is attentive and attentive, and you can feel the spirit of this vibrant and growing restaurant.

It's a place I always enjoy returning to, both for the quality of the food and the courtesy and professionalism of the staff and management.
The place is very unique; I highly recommend it for a break from the usual cliché of a pizzeria or traditional restaurant.

I've eaten Japanese fusion cuisine at Kobuta several times. Each time, I've been extremely satisfied with the refinement. You can see the artisanal touch and the concept used to achieve a result that's different each time, yet highly enjoyable. Excellent.
