The last real tavern in the upper Maira valley where you can taste traditional dishes: potatoes and aioli, anchovies with mountain butter and red sauce, ravioles, ula, polenta and venison. The final meringue, cooked in the wood oven where the bread is also made, is a pleasure!

Ti accoglie un ambiente semplice tradizionale caldo famigliare . Il cibo di qualità eccellente, semplice ma di quella semplicità che scalda il cuore , soddisfa il palato e difficile da eguagliare con così tanto gusto e maestria . E poi come non fare un plauso ed un inchino al signor Rolando , proprietario e chef , persona meravigliosa con una passione per il suo lavoro la sua terra e le sue tradizioni che creano emozione e vorresti restare ore a chiacchierarci al bancone . Consigliatissimo da provare e riprovare e ritornare ancora !!

Tutto fatto in casa!!! Tutti prodotti del luogo!! Dal pane al dolce agli amari. Se siete in zona andate lì. Titolari gentilissimi e disponibili e la ragazza ai tavoli è fantastica!

Rolando, prima di lui Maria, è una garanzia per chi come me è solito frequentare Chialvetta. Un oste che con cura prepara ogni singolo piatto, è aperto quasi tutto l'anno e con molte sorprese riscopre a 1500 metri una cucina autentica e impeccabile. Cito i "Raviolos" ma anche lo "zabaione" come miglior piatto della casa!

The menu featured a variety of eclectic dishes, ranging from traditional Piedmontese dishes to innovative and refined creations. The staff were incredibly knowledgeable and attentive, walking us through the menu and suggesting wine-food pairings that turned out to be flawless. The wine selection was impressive and added a touch of sophistication to the meal.
