An elegant and beautiful restaurant with an ancient and beautiful atmosphere

I thought this was an absolute top experience. The incredible setting in this former fortress. I thought the food was magical. And we opted for the premium wine formula where we asked to replace the proposed 1985 Bordeaux with a top Italian wine (and we received a beautiful Bolgheri Superiore). A truly impressive culinary experience.

Ritornare in questo bel forte medievale dopo il cambio di gestione mi ha lasciato piacevolmente sorpreso. Innanzitutto uno stupefacente restauro degli ambienti ed una nuova organizzazione degli ambienti. E soprattutto il cibo, protagoniste sono le eccellenze locali come già in precedenza, ma ancora più nobilitate e ricercate. Gli affettati (mortadella e culaccia sopra tutti) basterebbero a saziare gli appetiti più esigenti. Poi se siete anche golosi non perdetevi i plin d'anatra arrosto. Vogliamo poi parlare della carne o dei dolci..? Eccellente!

Da segnalare Cappasanta con broccoli sala olà Dea e e tartufo nero: equilibrata e indimenticabile Erbazzome: magistrale Midollo tonnato e tartare con caviale: esperienza fantastica Ganassini: delicatissimi Carrello dei formaggi; super, da segnalare la preparazione della maitre a fromage Piccola pasticceria molto buona Cantina notevole Lo chef sa cogliere l essenza e propone piatti che esaltano ingredienti e ricette della tradizione emiliana, rivisitati con freschezza di idee dalla grande creatività. Consigliatissimo per chi cerca uno stellato nuovo

The restaurant holds one Michelin star, in my opinion it deserves a second, congratulations to all the staff, from the kitchen to the dining room. Spectacular location.

Without a doubt a place to visit...a starred one but which preserves tradition...starting from a formal but not too formal welcome...well-prepared dishes presented with unique flavours...very nice place...in key ancient but not excessively sumptuous...a beautiful evening for a place where we will certainly return...

A place that needs no introduction, fantastic menu, wine list that becomes an experience even just by reading it, passionate and competent service. What makes the place unique, however, is the pleasant sensation of feeling at home.

Impossible to give a negative rating. Spectacular location, I would say perfect in every detail. Excellent service, always present and friendly. Very personal and highly specialized. Very interesting tasting itinerary, refined and carefully prepared dishes. An interesting experience. Very deserved star.

We had high expectations, perhaps for this reason the judgment is a bit harsh. Let's be clear, we didn't have a bad meal and despite the rating, I would honestly still recommend the visit for the place and for some of the dishes. But… In the tasting menu, trout and cuttlefish are not particularly memorable. The cappelletti are sincerely disappointing, not a starred dish in concept and execution. The ganassino is very good. At the next table, two people having a business dinner had a grilled steak cut at the table: it seemed better than our menu. Very competent cheese trolley and fun ice cream trolley but with some choices that are not for fine dining. However, both were presented very well by the staff. However, the rest of the service seemed less than close-knit and not always of a fine dining level. The place itself is truly fascinating, being a fort from a few centuries ago adapted into a restaurant starting from a private house. Perhaps one of the most intriguing locations we have seen recently. 👨‍🍳In short: beautiful location but the cuisine for us is not up to the star level 🤩Unmissable: the ice cream cart is truly original 🤔To rethink: a little about the service but above all a little more work on the menu
