The absolute highlight of my 2-week European trip! After visiting the Leaning Tower, we wanted authentic Tuscan cuisine and found this Michelin Bib Gourmand gem. Despite a reservation mix-up by our hotel, they were kind enough to accommodate our walk-in. Unlike the surrounding tourist traps, it was filled with locals and a warm, traditional atmosphere.
A special thanks to the red-haired staff member who guided us through the meal with such kindness and perfect English. Every dish—fried bread with prosciutto, rabbit tagliatelle, ravioli, tagliata, and the legendary ossobuco—was a masterpiece. To be honest, this meal was even more memorable and moving than the Michelin-starred fine dining restaurants we visited in France and Austria. It was the perfect finale to the scenery of the Arno River and Tuscany. Pisa is famous for Fibonacci and Galileo, but this restaurant made it unforgettable for us.
Good, but I had higher expectations. The pappardelle with duck ragù didn't quite work; the ragù didn't hold together with the pasta because the meat was too chunky. The wild boar with polenta, vegetables, and dessert were good. The wine by the glass was good (a Bolgheri). The quality/price ratio was less satisfactory than other places in Pisa.

I stopped here for lunch on a Monday, since many other restaurants were closed.
I was drawn to the meat-based menu and the stickers on the door featuring Golosario, Osteria d'Italia, and the Michelin Guide.
I was lucky because it quickly filled up, so I recommend booking.
On the owner's recommendation, I chose that menu, and he offered to order half portions of the two first courses. Everything was excellent and served piping hot: the fried pasta with delicious prosciutto was delicious, the tagliatelline were fabulous: as they said, I'm not a fan of artichokes, but I really liked the pairing with rabbit. The tagliata was beautifully presented, well-seasoned, and the olive oil they brought to my table had a truly intense aroma. For dessert, I wanted to try the pear and cinnamon tart instead of the coffee bavarois. This was perhaps my mistake, not because the dessert wasn't good, but rather piping hot and with all the flavors clearly evident. But I found myself paying €46 for a liter of water and a coffee.
I was in a hurry and didn't ask for an explanation, but the only thing I can think of is that the dessert substitution increased the total bill or that the menu price wasn't reduced. In any case, I'd hate to give it 3 stars because the staff was kind and treated the customers they had to turn away, and they didn't rush me to leave to vacate the table. It's a shame because I would have gladly given it 5 stars.
