The food was excellent, as was the service and ambiance, and the staff were friendly and empathetic. Special thanks go to Alma, the young woman who looked after us during our pleasant stay, for her kindness and professionalism.

We visited the Olivarium pizzeria and had a very positive experience. Convenient on-site parking is a big plus. The restaurant has a large garden surrounded by olive trees, which is very pleasant, although it's often crowded: I recommend making a reservation.
The staff is friendly and organized; you can tell they're trying to manage the flow of customers well, and they immediately alerted us to the wait times. We had panadina sandwiches for an aperitif and two pizzas: everything was delicious and reasonably priced.
It's not an intimate or romantic place, but it's perfect for groups, friends, or casual evenings. Overall, excellent food and good organization.
I'll start by saying I only tried the pizza.
Nice place, nothing too pretentious. I'd say honest and in line with modern times.
We ordered two pizzas for €20 (a little high, but still within the acceptable price range). Be careful, the takeaway box costs 50 cents. Bring a bag from home and use that 50 cents to tip the staff.
After 20 minutes, we asked for our order and were told the kitchen hadn't received it. Never mind, the staff is friendly, and we didn't argue. It happens. In the end, we waited over 45 minutes (PD).
The problem is the pizzas: a crudité of carbohydrates, a tartare of starches... Basically, practically raw.
The dough might be above average, but Jesus Christ, cook these pizzas! They need to be crispy! (PD)
Pizza chef, listen to me:
Hydration 50%
Bread weight: 180-200g
Oven 280-300°C
Baking time: it should start to form black dots ALL OVER THE CIRCUMFERENCE and the dough should turn light brown. (PD)
You can't go wrong, everyone will be licking their lips.
You forced me to eat a gelatinized colloidal suspension of starches and gluten.
Bake this damn pizza, you'll see, it'll be better!
GOODBYE.
Added after the owner's reply:
Ancillary costs (such as cardboard) must be absorbed into the price of the products. A customer who takes away the product represents a saving for the company that far exceeds the cost of the service. Penalizing takeout is illogical.
Cooking is not a matter of personal taste. The pizza was raw because the dough was still gelled inside. This indicates unbalanced hydration, timing, and temperature. The fact that your customers enjoy raw pizza doesn't change the objectivity of the facts. There are millions of people who go crazy for McDonald's burgers, just as there are those who can't give up their caddozzone, but that doesn't mean these are gourmet preparations. Your pizza was raw; if you like it that way, make it that way. But don't say it's normal for it to be raw, because that's not true. And don't tell a customer, "Our customers appreciate it, but you want it cooked, so you're not a good candidate." You might simply have customers who don't realize it and eat it, or who simply don't say anything out of politeness, since almost all pizzerias in Sestu are awful, and you easily win for that reason.
You know how to make pizza; you have to learn what's objective. Tastes are subjective. Cooking is a chemical-physical process. I'm not being rude or stupid for pointing this out; you're guilty of arrogance in trying to "silence" me.
Oh, I pay 15-20 cents each for 33-pack pizza boxes, so either your supplier is cheating you, or you're making a profit on the box.
Considering that even on Amazon, 100 boxes cost 29 euros...
So, yes: the pizza was raw, and you're making a profit on the box.
Furthermore, you reply to reviews only to avoid responsibility and make the reviewer look stupid. Don't seek confrontation; try to discredit those who give you advice.
I'll come back to you, because you're the least bad in Sestu. But please, absorb the criticism constructively.
Try cooking this pizza and you'll see how your customers will appreciate it more.
If I were you, I'd remove the box from the receipt; it's truly beyond comment. Without cardboard you are anything but economical.

The restaurant has a very welcoming atmosphere and a spacious, pleasant terrace, perfect for enjoying a meal.
The service was quick, attentive, and very professional, making everything feel comfortable from the start. The pizzas were delicious, and the value for money is excellent. Definitely a place worth returning to.

Unfortunately, the only positive things were the friendly staff and the very nice place. The cutting of the meat (not cooked perfectly) could be improved, and the wait times were interminable. Unfortunately, I won't be returning.
