03/08/2025: Madre Selva is a true landmark in Palermo, not only for lovers of Argentine cuisine and culture, but also for anyone seeking an authentic, welcoming place where every dish is delicious and tells a story. You can immediately taste the attention to detail, the careful selection of ingredients, and the love for tradition that Gustavo, the Argentine chef and owner, infuses into everything, from the kitchen to the warm dining room to the excellent and well-stocked wine cellar! My father, a Palermitan born and raised in South America, rediscovers the authentic flavors of his childhood here: every visit is like a journey back in time for him. And for my wife and I, who are vegetarians, it's always a pleasant surprise because they offer a wide variety of options, including guacamole, various vegetarian main courses, empanadas with onions, those with walnuts and cheese, and corn humitas, which are so good we could eat them over and over again! The service is always impeccable, kind, and attentive. We highly recommend it!
