12/07/2026: By sheer chance, on this sunny Sunday in July, I found myself discovering a magical place, rich in the culture and authentic flavors of our land. So, even though I was extremely late, I found myself at the Fontana Bosco farmhouse. You reach it via a beautiful woodland path, a walk immersed in shady oak trees and thick tundra. You park your car in a clearing and immediately feel immersed in the sounds of nature. The shrill chirping of cicadas escorts you inside the simple, rustic mountain setting, the kind of place you enter on a winter evening and find a roaring fireplace. Carmine Perfetto welcomes us, a kind man who immediately welcomes you and puts you at ease. He asks if we're willing to embark on a gastronomic journey, a journey filled with the flavors of his land, and ours. A journey through the flavors of Campania, combined with its star attraction: truffles. We decide to indulge in good taste and let ourselves be carried away by his wisdom on what will prove to be a splendid food and wine Sunday. During lunch, I step outside and meet Carmine, a kind, cultured man, full of values and spirituality. He tells me what he does, what he lives for, his passions, and his truffle hunting. He explains to me, with a simple guide, what we ate and when it's best to hunt for truffles and in which months of the year. I discover a charming and charismatic person with a mission: to share the flavors and excellence of our land. I realize I'm unfamiliar with all this. Only after speaking with him do I delve deeper into the establishment and discover newspaper articles and photographs, realizing that Carmine is an important person, a treasure of our land. A truffle hunter by birth and by passion. I realize I'm in a magical place, full of history and culture that must be shared. This is what Carmine does. Beyond the exquisite dishes, people leave his restaurant knowing that the Maltese, from the upper Caserta area, are also excellent when it comes to truffles. I can assure you that this Sunday was more than enjoyable. From the rich and authentic appetizers to the tagliatelle with local truffles—fresh, delicate, and truly hazelnut-like (as he says), not to mention the paccheri with pancetta and salted ricotta. A Caserta black piglet served like the best Angus on a bed of rucila and shavings, and finally the excellent desserts, I can assure you that at the Fontana Bosco farmhouse you breathe healthy air, good air, an air of culture and local flavors. Getting to know and appreciate Carmine's "Mission"... was the most surprising thing about this Sunday. I recommend you visit him. Thank you so much for everything ❣️
