Small place with few seats, in the heart of Trastevere. As a starter we opted for the Maritozzo with oxtail, while as a first course we had the carbonara. Superlative Maritozzo, soft brioche both in the center and on the surface like a real Maritozzo should be, and then there's the dream cooking, that tail melted in your mouth almost shredded with an unmistakable flavour. The first was the carbonara, what can I say I found an almost perfect balance of flavors between the cream and the bacon which was also browned well but not burnt. Worthy of note are the quality raw materials, even the pasta cooked al dente. For dessert we have eggnog cream flavored with Marsala, even if slightly liquid an excellent product.

Quite good food (2 different carbonaras) and nice wine pairings. Not fully convinced about the pricing though (seems pricey) and service.

Incredibly lovely and lively waiter. Lovely elegant food! A bit more expensive than other restaurants, but well worth the money!

The restaurant isn't terrible, but it certainly disappointed my expectations. Excellent service, but from a place with an entire section dedicated to carbonara, I expect the latter to be of a high standard, but nothing incredible.

Restaurant where egg is its protagonist, and from our point of view too exaggerated. They aim to innovate but they don't get it right.

A different place on Rome, but a lot of marketing and little quality.
Lots of creativity in menu presentation but little in quality. The presentation of the egg game with the six preparations was not very qualitative: the pecorino cream was watery, the crodino jelly with the other ingredients were not well combined. Then we took two carbonaras, a classic one and a green one with artichokes: the classic one was nothing wow-worthy, while the green one was excellent. In general the ingredients are not well balanced and the waiter who served us could not recommend a wine based on the one we had, the answer was: "they are all excellent pairings". No comment on the answer.

Nice place where to get anything based on eggs. Carbonara top and also starter with different tastes of eggs. I would recommend to try the typical first and then make some changes with the variety of eggs tastes
