We'd been curious about it for a while, and finally we went to try it. Eggs is a lovely restaurant in Trastevere, with a very pleasant atmosphere. The cuisine, strictly egg-based, is impeccable. We tried the egg game, with six very gourmet recipes served inside six eggs, and they were very well balanced. The Roman-style artichoke with pecorino cream was very good, and we tried two of the ten carbonaras, the red and the black, which were perfectly balanced. The service was impeccable, and worthy of a high-end restaurant. A very positive experience, worth repeating.

The name might be misleading, making it a "themed" restaurant. Eggs are clearly the star of the show, but we're talking about a full-service restaurant. This will be my third time there, and every time, even if a little surprised, I say, "Wow, I ate so well!" And every time I look at the menu, I choose something, but I want to eat everything else too. It's my ideal place because it's balanced; it's a restaurant but not too much of a restaurant, creative but not too creative, traditional but not too traditional. Luckily, it's not close to my house, otherwise I'd eat there every day. My question is: why do all the people go to the awful places in the rest of Trastevere?

Service is top notch, interesting all men waiters! The stuffed rabbit was amazing and the desserts! The bento box and especially the carbonara were served at best luke warm. I like my food hot when it supposed to be hot! The carbonara sauce was almost congealed. I think they make a bunch in advance and it sits under a heat lamp. Would not go back for the pasta! We had so much better at other places! The first carbonara they served and returned, and the second one was not any better!

I went to this restaurant with a friend for an impromptu lunch break between commitments. I truly appreciated the aesthetics, both of the decor and the dishes. Besides being aesthetically pleasing, the place is extremely clean.
I tasted an excellent 1954 carbonara, the first carbonara recipe ever written; one dish left me feeling quite full. I think I'll choose this place again, but for dinner, not a quick lunch.
My dish was balanced; the pancetta wasn't overpowering, and the salt was just right.
I appreciated the idea of a conceptual restaurant offering many variations of the same ingredient. However, since it's a very unusual and expensive offering, I would have needed more guidance, as it's unclear what should be an appetizer or a main course. I was cautious, and it turned out to be a winning choice.
While my overall opinion is extremely positive, I'm not sure whether they wanted to position themselves as a gourmet restaurant developing a creative concept, or whether they wanted to be a more conceptual, trendy place. The prices are those of a restaurant, the space is trendy, the service formal, and the food is trendy. I've worked in the tourism industry for over 25 years, I love courtesy and hate waste, so a special mention for serving a small meringue with my coffee is in order.
