Excellent. I'm still impressed by the burnt lemon in the grilled calamari and the sturgeon: exceptional.
The sommelier is the best I've ever dealt with. A wonderful person, who exudes passion and love for his work: precise, frank, present, and elegant.
As for criticism, it's a shame we didn't find a proper tasting menu to choose from, because the one offered was too derivative of the individual dishes on the menu, so we decided to skip it. This was a great disappointment for the occasion: I would have preferred a menu with different, specially designed dishes.
The small pastries were good, but could be greatly improved: of the four desserts, two were very heavy and difficult to swallow.

AN EXCITING MAKORÈ!
One of the most interesting gastronomic experiences of recent years. Intelligent, modern, refined cuisine, yet rooted in its local tradition. A welcoming atmosphere in its essential, elegant simplicity. A well-trained, attentive yet discreet dining room team; a kitchen brigade led by the expert hands and heart of chef Denny Lodi Rizzini. A quiet man who lets his dishes speak, or rather sing, literally captivating his guests at the table.
The first courses are masterpieces of flavor and aesthetics, the appetizers are authentic culinary overtures, and the second courses are a journey through time and space between history and the future. I will never forget the fragrant, warm bread, the crunchy Roman-style pizza, and the desserts by a pastry chef like the talented Valerio De Santis, whose personality and imagination stand out.
A truly captivating experience at Makorè (Via Pastrengo 10) in Ferrara.

Warhol-Makorè combination with her too!).

I must learn to trust when I sit in any restaurant in Italy. Im in good hands. This was a terrific example. Not my favourite 80s fit out, and the vibe is as formal as a dinner suit. The menu reads too much like Fusion. But it really delivers. The cover charge is a bargain for the quality amuse and wonderful breads. The service is terrific. Wer raced through for a light lunch, but we received all the care of nurse to patient. The two dishes were outstanding. I won't do a technical rave, but it qas all there an the plate. Seismic reductions, sublime handling of the seafood and flavour combinations that were off centre in the best possible way. Best still, there was no urgency to mix cultures for any other sake but the need to match flavours and textures for the desired conclusion. Great wine by the glass too, and gently thorough pride to teach me about the wines of the region. A total success.

Interesting menu and an outstanding tasting menu for under €80. The fish and seafood were cooked to perfection. The dining room was impeccable, with a great sommelier. The extensive wine list features many local selections at a variety of prices. Wine by the glass is available for €6, for example, to accompany dessert. As for the cheeses (why the French selections???)... the pecorino was powerful and well-aged.
