We've been going to this butcher shop for 30 years now. They have everything, and it's top-quality. When we need to make unusual requests, just call one or two days in advance and they'll be happy to accommodate. I hadn't eaten kidney or sweetbreads (mainly made up of thyme, but sometimes pancreas and salivary glands) for years. Thanks to Agnoletto, I've gotten over that craving.
