We bought a Sardinian suckling pig, followed Gianpaolo's recipe to the letter, and it turned out delicious. We hoped it would turn out well, but instead, it exceeded our wildest expectations. Thank you, we'll make it again.
The only thing missing was the myrtle sprigs for decoration.

I found authentic fresh sausage, as they make it in southern Sardinia, at this butcher's shop. It's small but well-stocked.

Porceddu TOP, small and delicious, and very easy to make at home: half a piglet, salt and pepper, static oven at 180°C. 1 hour and 20 minutes rind side down, another hour rind side up, and then, without turning, 10 minutes under the grill until the rind is crispy (be careful not to burn it) 😜

I've been regularly getting my supplies from Giampaolo for a few years; his kindness, his expertise, and the quality of his ingredients make all the difference.
I also had the opportunity to buy half a suckling pig and bake it following his advice...it felt like I was in Sardinia! 👏🏻
