I hope you accept my criticism, I am the owner and chef of a restaurant.....service and environment I gave 4 and not 5 stars only because we have different tastes in furnishings, In the kitchen sector, which is my 360° responsibility, I would have some notes to make. The risottos are either made well with the classic risotto process using Carnaroli arborio rice etc... Or it is better not to offer them......the risotto that arrived at the table was not a risotto.....it seemed as if the rice had been boiled in water, drained and added to the sauce...the result was a separated and non-creamy risotto with too much seasoning which did not have time to flavor well without obtaining a creaminess which instead differentiates the risotto from boiled rice and then creamed with the seasoning. Having said that, I reiterate that these are opinions expressed by me, who am a professional chef, therefore they are fussy opinions and do not call into question the freshness or quality of the product but rather the methodology and the imperfect execution of the dish. I will definitely return to eat in this place with the hope that my advice/judgment can be constructive and improving for the cuisine sector.
