Let's start with the location: Two rooms The first, located at the entrance, is a few tables with a view of the oven The second, much larger, is separate A simple but very graceful, comfortable and effective furnishing choice. We are in the PIZZERIA! A Vera, Signora Pizzeria, born from the product, evolved from customer requests. I'll explain: strong in takeaway, it develops two rooms that are always full with the "takeaway pizzeria with table" formula. The product: The seasoning: Top raw materials and a lot of attention to seasonality. Great assortment of pizzas on offer, almost all of which are 'white', all of which can happily become 'red': de gustibus, non disputandum est! The dough: absolute strong point! The traditional one is highly digestible, I haven't tried the 'wholemeal' version yet Spread: low and wide, this is how its target market wants it, with a border, however not thin, not dry but soft and very pleasant to the touch and... to the bite! Beers: excellent assortment on tap; I chose a Belgian redhead, truly remarkable!!! I count: Two gourmet pizzas Two beers 1 water 44 euros for two, we are in the province of Varese, the second most expensive city in Italy: it doesn't seem expensive to me. 5 well deserved stars

Siamo andati a mangiare la pizza una sera di novembre. Il locale si trova in centro paese, è molto piccolo, quasi come mangiare in famiglia, molto semplice ma carino. Nota dolente, all'interno faceva davvero freddo, i caloriferi erano spenti, ed il viavai di persone (tra clienti ed asporto) non aiutava di sicuro. Il nostro tavolo poi era proprio vicino alla porta. Un peccato perchè la pizza era davvero buona, ma mangiarla al freddo non è il massimo. Ampia la scelta delle pizze, a cui aggiungono alcune fuori menù. Impasto leggero ed ingredienti di qualità.

L'impasto perfetto, così come la lievitazione. La cottura è la parte più critica per un pizzaiolo, tempi, riposizione perfetta sul primo punto d'appoggio durante la cottura, sennò si brucia ecc. In sintesi la cottura era al limite, poteva esser leggermente più cotta, ma diciamo che voglio esser proprio pignolo! Perché in sintesi la qualità era eccellente. Non sono avvezzo a lasciare 5 stelle per non creare aspettative, anche se ero molto tentato. Una gestione con molta creatività che propone pizze ricercate e ben strutturate anche un po' "garibaldine". Ma attenzione all'equilibrio tra sala, cucina e direzione, tutto deve girare bene, in sincronia. Ma comunque stiamo parlando di un locale di provincia, nobile e vero così come dev'essere in se la provincia. Di locali gourmet, dove mangi poco e spendi tanto, possiamo anche farne a meno. Questo non è il caso.
