02/06/2026: I'll start by saying I'm not a mozzarella fan, so this review is very, very subjective.
The pizzeria menu is unique and interesting, but the ingredients aren't changeable, as written and highlighted on each page. I spot a pizza without mozzarella, the "Tuna and Onions My Way," with some interesting variations on the theme.
When it's time to order, the waitress apologizes and tells us that two of the pizzas on the menu aren't available that evening...naturally, one was the one I'd chosen.
I quickly look for an alternative; the pizza is made with Fiordilatte DOP mozzarella, and I ask if they'd be kind enough to use a small amount.
The waitress kindly tells me not to worry, as their pizzas are very well-balanced in terms of ingredients.
When they arrive, excellent timing and a nice visual, I notice that it's quite white.
I cut the first slice and found myself covered in mozzarella...
Nothing to complain about the quality and value of the product. They must have put the equivalent of two mozzarella balls on a pizza. Unfortunately, I only managed to eat half, and from that half, I removed 50% of the mozzarella (an incredible waste and shame. I can't stand having to throw away food, especially when it's high quality).
Again, I'm sorry I'm a bit of a white fly and don't like mozzarella, but when asked for a specific ingredient dosage (often related to intolerances, etc.), greater attention and flexibility should be shown.
