It was truly a sublime experience: there were two of us, we started with two Spritzes as an aperitif and then continued with two fried pasta frittatas with truffles and an octopus salad: frittatas with balanced flavors, which is unusual with the presence of truffles, and the octopus salad was truly delicious, fresh, and impeccably dressed.
We continued with two pasta dishes: a classic one with sardines with the addition of saffron cream (a much-appreciated novelty) and a paccheri dish with clams, mussels, and cherry tomatoes on a squid ink base (I mopped up the sauce, right? 😂 🤣 😂), which I give a 9.
Finally, the service is also positive: present, but not pushy, as is the case in many places in the historic center, in the person of the maître d' Filippo and the assistant Ivana (she prepares and mixes excellent Spritzes... 😜).

There are places where you immediately understand that behind a pizza there's more than just skill, but a true culinary vision. Cagliostro is one of them.
In the heart of Palermo, the Sciarrino brothers have built something beyond the classic pizzeria: a place where technique, research, and Sicilian identity coexist perfectly.
The dough is clearly the result of careful study: light, flavorful, and extremely digestible. Each bite delivers balance, without ever being heavy.
What's most striking is the ability to transform simple, local ingredients into contemporary, elegant, and never banal pizzas.
The pizza I chose tonight, with fennel, anchovy, oranges, and wild fennel, and a touch of orange oil, was immediately a refined reminder of a typical ancient Palermo salad: fresh, citrusy, with a perfect balance of sweetness and aroma. A thoughtfully crafted pizza, crafted with intelligence and a strong personality that evoked childhood memories of my grandparents' house in the summer, that unique aroma of that salad that only as an adult did I truly appreciate, and that only those who know tradition can remember!
The truffle pasta frittatina with fresh shavings was also extraordinary: crispy on the outside, creamy on the inside, intense, enveloping, but always well-balanced, without being overbearing.
The sausage and broccoli rabe my boyfriend chose was also impeccably executed: top-quality ingredients, well-balanced flavor, and a dough that enhanced every element without overpowering it.
At Cagliostro, you can sense a constant research into flours, leavening, cooking methods, and the selection of raw materials. But what makes this place special is that all this technique is never ostentatious: it arrives at the table naturally, through pizzas that express Palermo in a modern, elegant, and recognizable way.
A place that truly deserves all the accolades it's received to date, and much more! Well done guys!
