L'artigiano Della Pizza In Francavilla al mare

Passing by for work, I tried this pizzeria. I personally had a good pizza. My companion tried a sandwich that looked great, and the flavor was decent, but it was a bit too salty, probably not because of the burger but more because of the toppings. The service was fast and the staff was friendly. The prices are quite high, especially considering the location. I'd give the owners a huge piece of advice: fix the problem of voice reverberation in the dining room; it really makes you feel dizzy. Otherwise, it's okay!

The pizza had several flaws. The dough, likely low in hydration and rolled out too thin, lost heat immediately and hardened almost immediately. The mozzarella used, of sub-optimal quality, was rubbery and lacking in lactic acid, a sign of using a standardized rather than fresh product. The result was a flavorless pizza, lacking both fragrance and overall balance. Even the lactose-free version had the same flaws at a price of €15... I would have expected better, which could have been achieved with a little more attention to preparation and a smile from the wait staff!

Clean and welcoming place. Attentive and friendly staff. Excellent pizza dough. The desserts could use some updating, both in terms of ingredients and execution, but they're still decent. I recommend it.
