I went to this restaurant for the first time less than a year ago. I asked an acquaintance of mine from Viterbo to show me a place where I could eat good typical dishes and he suggested L'Archetto. I had passed by it many times, but I hadn't had the chance to try it yet. Located in the historic center, this trattoria, a comfortable and welcoming place, has all the characteristics for lovers of good local cuisine. The menu changes often, to always provide dishes in line with seasonal products. The generous portions are served in a simple and tidy way. For those who wish or need to eat a little less, there is the possibility, offered by the staff, of ordering half portions. An excellent initiative, both to try multiple courses, but also to not waste food. Yesterday we had lunch there again and we were looked after by Elisabetta, a truly friendly person, capable of pampering the customer and making him feel at home. We were all satisfied with the quality of the food, the cleanliness, the kindness of all the staff and the decidedly honest prices. You gave us a very pleasant moment and we will return to visit you soon. I recommend booking.

The ambience is beautiful, the food, well, I've had better! The tagliatelle al ragù were generally not bad, but I missed the oomph and salt. The oxtail was nicely braised and delicious. The house wine tastes like it comes from a discount store and comes out of the box. The dessert was delicious. Unfortunately, the two service people walk from table to table attentively, but with an air as if they were coming from a funeral. Basically they were nice, but really just that... Conclusion: Gastronomy is much better; too bad!

IL RISTORANTE HA POCHI COPERTI
Detto ciò, ho prenotato per un pranzo di coppia, siamo venuti a Viterbo per vedere i mercatini di Natale (delusione assoluta, ma almeno il ristorante è stata una gioia).
Abbiamo iniziato con un tagliere composta da formaggi principalmente di capra e pecora (molto particolare il formaggio nero con cottura al carbone vegetale), broccoletti viola, ricotta di pecora, salumi del luogo tra cui salsiccia di fegato e normale, mortadella di cinghiale, coppa (soppressata) condita, coppa semplice, prosciutto stagionato, salame con una leggera presenza di finochiella (percepita e molto gradita, ma non siamo sicuri della sua presenza).
Per continuare abbiamo ordinato due primi; una porzione di "Fieno" (pasta all'uovo tipica Canepinese, tipologia di spaghetti estremamente fini) al sugo di costarelle con pezzi di salsicce alla finochiella (Mac. Pallucca) e una porzione di Lombrichelli Cacio e Pepe con Tartufo nero estivo, molto gradite e la cacio molto abbondante.
Per concludere, un dolcetto, crostata di visciole e ricotta locale e 1 caffè. LA CROSTATA CI HA FATTO SOGNARE!

Book! The restaurant has few seats.
Having said that, I booked for a couple's lunch, we came to Viterbo to see the Christmas markets (absolute disappointment, but at least the restaurant was a joy).
We started with a platter made up of mainly goat's and sheep's cheeses (the black cheese cooked in charcoal is very particular), purple broccoli, sheep's ricotta, local cured meats including liver and normal sausage, wild boar mortadella, coppa ( soppressata) seasoned, simple coppa, seasoned ham, salami with a slight presence of finochiella (perceived and very welcome, but we are not sure of its presence).
To continue we ordered two first courses; a portion of "Fieno" (typical Canepinese egg pasta, a type of extremely fine spaghetti) with rib sauce with pieces of finochiella sausages (Mac. Pallucca) and a portion of Lombrichelli Cacio e Pepe with black summer truffle, very welcome and the cheese is very abundant.
To conclude, a sweet treat, sour cherry and local ricotta tart and 1 coffee. The tart made us dream!
Total bill €49.50
We consider it an honest price for the type of location, the kindness of the staff, the attention to raw materials and in general for the good food.

We went there for dinner and were satisfied. We tasted the typical Viterbo dish acqua cotta for the first time, plus we ordered a platter of really good cold cuts and cheeses. Generous portions and average prices.
The restaurant operates two shifts at 7.30pm and 9.00pm, reservations are advisable.

Ristorantino tipico della Tuscia, con ottima scelta dei piatti tutti gustosi e tutti cucinati sapientemente nel rispetto della tradizione locale. La cortesia della titolare e della figlia è ragguardevole, ma senza cadere negli eccessi. La location è molto carina ed accogliente. Vivamente consigliato.
