Kudos to the staff at the Acqua Salata restaurant because today I felt at home. This place distances itself from the virtuosity that can sometimes be a double-edged sword, especially if a certain standard of quality is not maintained across all courses. The atmosphere is homey, because it is a family-run restaurant, so everyone strives in one direction: satisfying the customer, creating traditional dishes that are well-crafted and substantial. A quick note: if you don't like low-mineral Nepi water, you can choose San Pellegrino, Ferrarelle Maxima, or the classic one. Jokes aside, while talking to the waiter, I pointed out that today even the small details are an added value, including water. Let's get to the food. As is right, and I will never tire of emphasizing it, I appreciate the places that bring bread and oil to my table, a custom that is disappearing. We begin with a welcome appetizer from the chef. I have to say I like the menu because it's not very extensive and every day there are a couple of off-menu items. I wanted to order the spaghetti with clams and bottarga, but my attention fell on a first course I hadn't had in a while, namely the homemade fettuccine with octopus ragù. I think I made the right choice because in this dish I enjoyed a homemade dish from A to Z, the classic Sunday dish when you say I buy all the fresh, quality ingredients because I want my family to enjoy themselves. Well, in this dish I saw that; I would have just liked to see some tentacles too. For my appetizer, I ordered the €16 antipasto consisting of seafood salad, fried neonata, filo pastry and creamed cod. Good, the only thing I think is that the oil used to fry the neonata was either too hot or perhaps it hadn't been replaced because it tasted a bit burnt. The only thing I didn't think affected the excellent quality of the products. For my second course, I had fried calamari and mixed seafood, fresh from the day, and the fried food was dry, but good. As I told the waiter, I preferred the tentacles to the calamari rings. In fact, I found the second course a little rubbery. Otherwise, the fried food was good. For dessert, I had the house tiramisu, totaling €60. In summary, I can say that I ate well. The ingredients are well-prepared, high-quality, and not overly processed. I'll definitely be back to try the raw seafood and another first course. For now, I can wholeheartedly recommend this place.

Can’t say enough about this place. If you’re looking for authentic wonderful food while in town, this is it. Service, food, atmosphere.. they knock it all out of the park.

I've been there 2 or 3 times years ago...I don't know why I never left a review. A FANTASTIC memory, both for the menu and for the young man who welcomed and served us each time. I hope to see him again. See you soon!
