Good value for money.
Good meat, well cooked, fair price.
We spent €32.50 each and we took a lot of meat including:
Sliced, falda, zampina and 4 different types of bombette with a side of chips and a final bagnamusso.

In Sammichele di Bari, right in the center, a place that will leave you amazed. As soon as you enter, a counter overflowing with meat specialties, from the famous Apulian bombette in all their variations to the very famous local zampina, spectacular gnomarelli, and side dishes from potatoes to ash to grilled onions. The real blow to the heart, however, is given by the incredible choice of racks of selected types of meat. We also recommend the incredible tartare and obviously the carpaccio but the supreme delight is the raw zampina, stuff to make us repeat seconds. Excellent selection of bottled wines and equally good selection of wine on tap; you can also choose beer. The service is punctual and fast, they pampered us from the moment we entered until we left. The prices are adequate for the offer. In short, if I had to recommend it, I would do it by word of mouth. Make your choice.

Perfection and a rhapsody of taste. A meat restaurant with top quality meat. The concept is very simple, at the entrance to the restaurant there is a display case with meat and you choose how much and which pieces of meat you want, then you sit down in the restaurant and agree with the waiter what side dishes you want...
Staff on task, house wine is good quality and the price is only 10e per liter...
Perfect...it is recommended to make a reservation before arrival.

Amazing service by Blade, who gave us splendid recommendation one after the other from the fried zucchini flower, to the grilled tri-tip, sausage and dry aged t-bone, and finally finishing fabulously with the pastry puffs and semifreddo for the dessert. Since Blade was the only english-speaking staff at La Tradizione, we were taken care of by him and we never felt like we had to raise our hands for any requests, yet, we were also given ample space by him. Thanks for the wonderful experience!
Food review:
1. Zucchini: Fried to perfection, the batter was so light and it was not oily. The zucchini flower was crunchy on the outside, yet nice and soft on the inside to complement the fresh ricotta.
2. Grilled tri tip strips: How do I start? I think this might have been the star of the night. The rub was masterfully crafted with hints of parmesan and other spices while allowing the beefiness of the tri tip to shine.
3. Sausage: It’s good where you can taste the tomatoes and the meat together. Good but not phenomenal.
4. Dry aged T-bone: Dry aged meat lovers, this is for you. The dry age flavor is wonderful and you are also given a hot stone, which can be replaced with another, to cook your steak slices to your desired doneness. The steak is not very well-marbled, but it is tender.
5. Desserts: The filled puff pastry was nice and light, with a sweet crust on the top, reminiscent of a creme brulee. The filling was also light. On the other hand, the semifreddo was the heavier dessert, with the cold cream with almond bits, rich chocolate ganache, and the almond candy on top (they were generous with the almonds). A nice contrast in tastes and textures of the desserts.
I’d say, leave the recommendations to Blade if he’s serving you. He knows what’s best for you and your party.

Il nome di per sè a volte può tranquillamente consentire di individuare in quale tipo di locale e quale ristorazione ci si debba aspettare. Ma questa volta in un ambiente moderno e razionalmente suddiviso, rispetto alla tipicità del locale e al suo posizionamento su diversi livelli, ho veramente insieme a tutti i commensali apprezzato: la tradizione. Basata su una ricetta semplice e sempre complessa da porre in atto ma che testimonia come la presenza da molti molti anni di questo locale, abbia trovato sicuramente sulla località che ospita la presenza, non volendo esagerare forse la il migliore equilibrio tra la qualità della materia prima offerta e la completezza di offerta per tipologie di carni, tagli e prodotti nazionali e esteri. Un vero trionfo per il gusto e il palato, accompagnato da antipasti di livello anch'essi sotto il livello della qualità proposta di pari completezza come per la materia prima. In conclusione una serata all'insegna della tradizione, con tutti presenti gli elementi e le caratteristiche tipiche di un fornello o braceria, come più vorrete individuarlo questo esercizio che giustifica per chi viene in Puglia, una deviazione alternativa al degustare le offerte poste in essere dai ristoratori di mare. Complimenti a tutto lo staff per la sua attenzione alla cura di tutti i particolari che rendono per un cliente la serata un momento da ricordare con piacere. Unica prova del nove: Da verificare quanto accade nel fine settimana che per affluenza ormai nel nostro territorio ha sempre qualche leggera dèfaillance che mi auguro non sia presente nel dna della Tradizione.
