Cena sublime! Ogni piatto nasce dall’abbinamento audace di più ingredienti ciascuno dei quali conserva la sua individualità senza mai prevalere sugli altri. Un’esperienza olistica che coinvolge tutti i sensi : tra sapori unici, profumi deliziosi ed una musica di sottofondo sempre ricercata. Amazing vegetarian 5-course dish (the asparagus soup was something of the best food we recently tasted), the waiter was very cordial. If we had stayed longer in Pisa, we would have tried the new menu the following day. Absolutely recommendable!

After three restaurants with no availability for a free table on a Friday evening, we found a semi-empty restaurant on Via San Frediano and entered without checking the menu posted outside (it was currently occupied by a couple of tourists). The decor was minimalist, with tables stripped of tablecloths and cutlery, giving us the feel of a trattoria. With a very friendly welcome, we took a seat anyway. After a welcome appetizer of polenta and toppings to enhance the flavor, the menus were divided into three options: fish, meat, or vegetarian, with a fixed price of €50, and the price had to be the same for both of us (two diners). Undecided due to our differing tastes, we opted for the fourth menu, "à la carte," (more choice) but with prices significantly above average (very much so). We settled, as per our preference, on an appetizer and a main course; grilled artichokes for both of us, "beef on the coals" for me, and "pigeon 360°" for her.
From the meticulous presentation of the dishes, we knew this wasn't just a "simple osteria" but a high-end gourmet restaurant (I'd say, from the portions and culinary presentation, "almost starred"). The "360° pigeon with pumpkin and chocolate" was served in four different courses, each with unique flavors that left her speechless; the tagliatelle with pigeon sauce and the macaron with pigeon pâté and chocolate were exceptional. When the "jugged pigeon" arrived, I was served the "beef with charcoal," topped with a thin slice of Cinta Senese rump; the meat was tender and flavorful, accompanied by a potato puff pastry with a wild herb salad. These were very elaborate dishes (very much so), with flavors unlike anything I'd ever tasted before, and, alas, for me, "insufficient quantities" to feel completely satisfied. The introduction to the dessert, the "almond and thallus ice cream," was meticulous and informative (as with the previous dishes, showcasing seasonally available ingredients); I'd never heard a maître d' discuss the details and provenance of the products for a dessert in such detail, and I sensed a genuine passion for this presentation. It was a new culinary experience that we enjoyed, and to top it off, seeing the "world's most expensive coffee" on the menu, I thought, "Why not?" I'd seen "kopi luwak" coffee years ago on a TV documentary, and curiosity drove me to try it [for those unfamiliar; to obtain civet coffee, the beans are ingested and excreted by the Luwak (the Indonesian name for this small animal). This is a small civet that lives in the Indonesian forests, whose gastric enzymes are capable of giving the coffee an incomparable, chocolatey aroma and unparalleled body]. Well, unfortunately, my palate wasn't capable of perceiving such an aroma, but it's an experiment I couldn't pass up; like tasting a glass of Sassicaia in Bolgheri and not tasting a difference compared to a Montalcino red, which I prefer regardless. Despite the high price of the dinner, we had a great time and I certainly recommend this restaurant to lovers of true culinary art—after all, quality has its price...

Caminando una noche tuvimos la suerte de encontrar este lugar. Servicio muy atento y me encantó el menú! Mucha gente hizo el menú degustación alrededor de 5 platos que se veían increíbles, pero tuvimos un almuerzo muy tarde, así que dividimos un montón de aplicaciones y entradas. Fue tan inventivo y delicioso. Chill vibra y el personal tiene como objetivo complacer! ¡Definitivamente pruébelo!
