We're back at Simone's, a guarantee of quality. The excellence of his products and the care he takes in preparing them make his pizza, and more, an explosion of goodness and flavor. Not to mention the excellent service from his staff, and his unique and exclusive customer service, especially in Genoa.

Good thin-crust pizza (extra) and excellent ingredients, but I found it very (too) sparse on toppings (at least the vegetarian one; perhaps I made a mistake in choosing it?).
Let's start with the place: small but cute, with the kitchen and ingredients on display, and a clean bathroom. There's also an outdoor terrace.
The staff is very helpful and attentive, which is certainly a strong point. The pizzeria operates in shifts: 6:30, 8:00, and 9:30, which is necessary given that the place isn't very large.
Regarding the pizza, I'll start by saying that I'm a fan of thin-crust pizza; this pizza is extremely thin (almost like a wafer), perhaps even too thin despite my tastes, but on this point I want to emphasize that rolling out such a thin dough can't be easy at all, and I applaud the kitchen.
The dough rises well and is therefore light and digestible.
As for the tomato, unfortunately, I wasn't very enthusiastic about it; it didn't have much flavor and didn't contribute to the excellent dough.
The mozzarella and vegetables were good, but here's the sore point...the mozzarella wasn't enough (I think they could have used 30% more), and the vegetables (the red tomatoes were my request) were truly meager, practically nonexistent in my opinion.
I also had a look at the table next door that had been served before us and saw that the pizza with black olives had only 6 olives, and the one with anchovies literally 3!!! Unfortunately, and I stress unfortunately, we're just not there on this point.
Regarding the saltiness, when he brought us our pizzas (they'd asked us when we ordered if we'd been there before), I imagine since it was our first time, the owner explained that they don't add salt or oil to their pizzas (unless otherwise indicated on the menu) to "maximize the flavor," but that of course, if we wanted, they'd bring us a bottle of oil and salt. Personally, I agree with this opinion (I'm not a fan of pizzas with overly salty doughs to make the ingredients more palatable), but even though I prefer a lightly salted pizza, I added a little salt. I think it might be a good idea to ask the customer when they order if they don't want salt, want it while the pizza is being prepared, or prefer to add it "raw" afterward, because adding it before cooking it blends better than after!
Regarding the cooking: masterful, white pizza without a single burnt spot, but perfectly cooked (even inside the crust), truly compliments.
The service was very prompt.
Overall, the pizza is very good. Based on my experience, I'd give it 3.5 stars, which I'm rounding up to 4 because 3 stars, like other pizzerias, is not enough.
However, I must say I'm disappointed that the amount of toppings (especially the vegetables and the approximately 30% extra mozzarella) was truly lacking! If they had the option of adding salt before cooking, and if, above all, they added more vegetables (or olives or anchovies) to the pizzas, which are basically less elaborate, this would be a fully 5-star pizzeria that would definitely be in my top 5 of the best pizzerias currently operating. Management, take note!

Good pizzeria. Many unique pizzas, and a wide selection of beers. Friendly, helpful, and accommodating staff. The pizza isn't a classic Neapolitan style. Prices are a little higher than average, but overall, that's okay. Recommended.

The restaurant offers a wide variety of thin-crust yet very large pizzas. The quality of the ingredients is excellent. The craft beers are also excellent. The unusual desserts are delicious, especially the cheesecake with custard and pine nuts and the tart with white and dark chocolate and berries. 😋 Quick and attentive service, prices are lower than the quality offered. The only problem is that the tables don't offer much space for diners since the pizzas are very large, and so are the plates. I returned a year later and found the tables replaced with others of a more appropriate size. The three sittings scheduled for Saturday evenings are a bit of a disadvantage for customers: from 6:30 pm to 8:00 pm, from 8:00 pm to 9:30 pm, and finally from 9:30 pm to the end of the evening.
