As good as it gets. Absolutely magical experience plus they were happy to accommodate our vegetarian diet :)

I had the pleasure of living the food and wine experience of La Pergola, the restaurant of the Hilton Rome Cavalieri, during a celebratory dinner. Everything from the food to the service to the ambience was impeccable. Chef Heinz Beck and his team exceeded our already high culinary expectations. Dining here, opting for the 10-course menu, was a unique experience that I highly recommend trying at least once in your life. You leave fully satisfied with both quality and quantity. Heinz Beck's carbonara stuffed dumplings... simply extraordinary!

We had the course with wine pairing, it was a bit much. The food was good but I was so stuffed about half way through. The view of Rome at sunset was great, the staff was also very nice and helpful.

Un posto così non ha bisogno di recensioni e scrivo questa dopo moltissimi anni. Certo ne è passato di tempo, ma ricordo bene ogni istante passato in questo luogo magico. Non c'è niente che non mi abbia piacevolmente sorpresa, stupita positivamente, rapita, felice ho degustato i migliori piatti della cucina in Italia. La pasta alla carbonara al contrario è stato il mio preferito. I dolci e la piccola pasticceria poi una scoperta continua con quei cassettini da aprire e in ognuno una delizia nascosta. Lo chef mi ha sorpreso confessando al tavolo che il suo piatto preferito è la pasta con i tenerumi, perché sua moglie è siciliana. Beh, non posso dargli torto, in primis perché uno chef così non si contraddice, secondo sono siciliana anche io e approvo pienamente. Grazie per questa esperienza di vita che custodisco nel cuore, spero di tornare un giorno a degustare le prelibatezze di questo luogo magico

The altar of cuisine par excellence
A place like this doesn't need reviews and I'm writing this after many years. Of course, a lot of time has passed, but I remember every moment spent in this magical place. There is nothing that hasn't pleasantly surprised me, positively amazed me, enraptured me, happy to have tasted the best cuisine in Italy. The pasta carbonara in contrast was my favorite. The desserts and the small pastries then a continuous discovery with those drawers to open and in each one a hidden delight. The chef surprised me by confessing at the table that his favorite dish is pasta with tenerumi, because his wife is Sicilian. Well, I can't blame him, first of all because a chef like that doesn't contradict himself, secondly I'm Sicilian too and I fully approve. Thank you for this life experience that I keep in my heart, I hope to return one day to taste the delicacies of this magical place.

Sono stato sabato 13 a cena con mia moglie...ci hanno accolto sul terrazzo che affaccia sulla citta eterna..accoglienza fantastica..personale gentilissimo ma soprattutto ti fanno sentire a casa..il maestro Heinz Beck..si è avvicinato più volte al nostro tavolo per accertarsi che tutto andasse bene..persona umile e gentilissima..non metto bocca sulla bravura dei suoi piatti perché è superfluo dire che erano opere d'arte..abbiamo preso un menù degustazione 10 portate..e non da sottovalutare carta dei vini con dei prezzi...equi e per tutte le tasche...non posso dire altro che grazie per l'accoglienza ricevuta..

My experience at the Pergola was somewhat atypical - in a positive way, of course - given that I had the opportunity to enjoy a stellar aperitif in the company of the Chef himself, sipping Champagne and enjoying various delicious canapés. But it was above all the second part of the evening that was magical, in which I tasted dishes that even today, more than a year later, I remember with immense pleasure. An honorable mention for the dish "A memory of Cappadocia", inspired by the chef's trip to Turkey: amberjack tartare in celeriac with a yogurt and barley coffee sauce, all recreated in the style of the mountains of the region. How can we not mention the "Fagottelli La Pergola", the chef's signature dish. Without exaggerating, this is the tastiest first course I have ever eaten in my life! I was also very impressed by the Chef's interpretation of the Sicilian cassata. Everything, from the atmosphere to the view, from the taste of the dishes to the elegance of the ambience, is an experience that would otherwise be unrepeatable in other restaurants in the capital.

We had an amazing night at La Pergola, the food was all delicious and unique and the staff were wonderful and very tolerant of our poor Italian. Very much worth the trip.
