Franco Pepe's pizza is undoubtedly among the best in the world. Coming from a brief meeting with the master, first at the Alma cooking school in Colorno and then during a wonderful experience in Caiazzo, I was missing La Filiale to complete the puzzle. I must say with regret that I was not impressed. I understand the prestige of being present in a structure like Albereta but there is very little of Franco Pepe except the name on the paper placemats. The atmosphere, the passion and the warmth of the welcome are missing. Franco Pepe's pizza is for everyone but in Franciacorta they still don't know it.
Ps. When it came to ordering dessert, we were not given the menu and among the verbal proposals, the fried pasta cone inspired by the pastiera was missing, which I would have definitely ordered. We do not know the reason for the gesture but if it were due to the time, unfortunately we waited a very long time for our pizza so surely the imminent closure influenced the decision of the waitress with the darkest shirt who told us about the desserts.

Undoubtedly remarkable ingredients but combinations that are sometimes too daring. In any case it is impossible to ask for variations, lack of lactose-free products. Waiters not always up to the task of the place.

And this evening I had dinner for the first time at @la_filiale by @francopepeingrani
I have never been to Caiazzo unfortunately but I am happy to have tried its pizza here in Erbusco... I tried its most famous pizza, the Margherita Sbagliata and I found it extraordinary... then, instead of dessert, I decided to try another pizza and I chose the Nero Fumé which was truly amazing and balanced thanks to the sweetness of the confit tomato which goes very well with the smoked buffalo mozzarella and the tasty sausage...
The two beers are also excellent... they are definitely the two best pizzas I've ever tried...

The pizza is divine as is the choice of ingredients.
As a lactose intolerant person it would be nice to have more choice or alternative but I must say that the waitress showed particular attention allowing me to enjoy the dessert with a small modification. It was not obvious so I was very happy.
The selection of beers is interesting.
The room is not very big but you can still have your privacy.
The price is justified by the choice of details and ingredients.

We took a peppercorn and fantasy pizza, a tomato pizza and one with anchovies. All very good with very refined ingredients.
Nice location. Desserts not at the level of pizzas.
Prices slightly above average but justified.

Se la valutazione si basasse esclusivamente sulla bontà della pizza (sia classica che fritta) il locale meriterebbe assolutamente 5 stelle e pure la lode. Pizza fantastica, impasto leggerissimo e ingredienti di assoluta qualità. Il personale molto gentile ma un pochino disattento in alcune occasioni.
Non sono d’accordo con coloro che hanno definito i dolci immangiabili, sicuramente non sono il punto forte della casa ma comunque la Tarte Tatin è buonissima e il tiramisù, nonostante lo preferisca nella versione “classica”, è buono.
Il prezzo per due è intorno ai 100 euro ( antipasto, pizza, dolce), sicuramente non poco ma a mio avviso corretto visto la qualità degli ingredienti e la ricercatezza dei piatti.
